1. To make the chicken meatballs meal prep: Make cauliflower rice with a large grater or food processor. Transfer to a shallow plate with 1/2 cup water and cook covered in the microwave for 4 minutes.

2. In the meantime, in a large bowl, combine ground chicken, cheese, grated garlic, Italian seasoning, crumbled bouillon cube, red chili pepper flakes, chopped parsley (or cilantro), and black pepper. Mix well with your hands or fork and form medium balls. Arrange on a plate and set aside.

3. Melt 2 tablespoons butter in a large skillet over medium-low heat. Cook the chicken meatballs for 8 – 10 minutes on all sides, until browned and cooked through. While cooking, baste the meatballs with the mix of butter and juices. Remove to a clean plate and set aside.

4. In the same skillet melt remaining tablespoon butter; then add lemon juice, chicken stock, hot sauce, minced garlic, parsley and red pepper flakes (if you want). Cook for 3 or 4 minutes, stirring regularly until the sauce has reduced a bit. Adjust seasoning with salt and pepper and garnish with more cilantro or parsley if you like.

5. Divide cauliflower rice into meal prep containers. Then top with chicken meatballs and garnish with lemon slices. Drizzle a little of the sauce over the meatballs and cauliflower rice, or keep the sauce into small containers. Reheat your chicken meatballs meal prep quickly in the microwave when ready to eat. Enjoy!

    I thought overall this was great. Recipe a little confusing especially the garlic (is it 2 grated garlic cloves + 2 minced OR 6 garlic cloves, 4 grated and 2 minced) plus said to add more parsley in sauce. Doesn’t say how much so I guess it’s your choice. If you don’t put in prep containers be sure to heat up the meatballs after setting aside when adding to cauliflower rice.

    Meatballs are great! Personally if you are open to the idea macro wise I would go for regular rice if you are not a fan of cauliflower. It just has a strong taste when it’s not in a dish with a bunch of other foods. Overall great recipe super easy to make!!

    Really good recipe. Easy to do for beginners and for the more experienced people. The sauce is very salty so i would recommand to go with a less salty chicken stock.

    My sauce did not thicken. Also, I don’t think it said anywhere to split the red pepper flakes. And where does the Italian seasoning come from? To me, it doesn’t mix well with hot sauce and optional cilantro.

    These were fantastic! The only thing I'll change next time is either cutting the optional bouillon down by half or looking for a brand with less salt. The bouillon I had on hand added nice flavour but made the meatballs very salty. Overall pretty excellent though. I used cilantro in the meatballs and sriracha in the sauce, and it had kind of a pho taste to it.

    Nice recipe but I added 1 whole egg and about 1/2 cup of breadcrumbs to the meatball mixture. The egg and breadcrumbs helped to bind but also the ground chicken I get tends to be extremely waterlogged, breadcrumbs helped to dry out the mix a little bit so I could actually form balls.

    Not a bad recipe, but you really need to add an egg to the meatballs to help keep them from drying out while cooking.
