One Pan Shrimp and Asparagus with Lemon Garlic Butter 

We make this shrimp and asparagus skillet at least once a week. You can stir steamed cauliflower rice through the buttery sauce for a heartier dinner if you’re extra hungry.

To make the lemon garlic shrimp recipe, buy shrimp (or prawns) already deveined, shelled, and cleaned, and you have yourself an easy shrimp recipe to prepare. You can use shrimp with tails on or off – We like to keep the tail on for aesthetic ;)

Try as much as possible to buy wild-caught shrimp. Look for medium to large-sized shrimps, because they tend to stay juicier.

Using frozen shrimp is okay for this recipe, but fresh wild-caught shrimp tends to have a better flavor overall.

How to cook the shrimp and asparagus

The recipe looks impressive but is very simple and straightforward:

  1. In a large skillet over medium heat, drizzle oil and add butter.
  2. Once butter is melted, add asparagus, then shrimp.
  3. Season generously with salt and pepper, spice and dried herbs, and cook, stirring occasionally, until asparagus is fork-tender.
  4. Stir in garlic for 1 minute or so until fragrant. Sprinkle garnish with parsley, lemon slices, and red crushed chili pepper over everything and serve immediately.

  • You can save time when cooking asparagus by blanching it first in boiling water for 2 minutes and then soaking it in ice water to stop cooking. Then, you can sauté asparagus as per the recipe. You’ll get your asparagus crisp-tender quicker.
  • Use fresh lemon juice (aka freshly squeezed) and fresh garlic for a brighter flavor. The shrimp will taste way better!
  • A heavy-duty cast-iron skillet works best for this dish; you can find one at good kitchen supply stores or order online.

Directions

1. Place a large non-stick skillet with 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the asparagus and season to taste. Saute the asparagus until crisp-tender, 4-6 minutes. Remove sauteed asparagus from the pan and set aside.

2. In the same pan, add the remaining 2 tablespoons of butter and add shrimp. Season with salt and pepper, fry shrimp for 1-2 minutes on one side.

3. Add the minced garlic, Italian seasoning, and onion powder to the shrimp. Stir to combine and flip the shrimp to cook on the opposite side. Cook shrimp for 1 minute, then add 1/4 cup vegetable stock and Sriracha. Allow the sauce to reduce for 1 minute, making sure not to overcook the shrimp.

4. Push the cooked shrimp on the side and add asparagus back to the pan. Stir asparagus to coat them into the sauce and squeeze half of a lemon over the top of the cooked shrimp and asparagus. Allow reheating for 1-2 minutes. Remove cooked shrimp and asparagus from heat, garnish with parsley, lemon slices, and red crushed chili pepper if you like. Serve your garlic butter shrimp with asparagus immediately–Enjoy! ❤️
