This potato cake recipe is a breeze to make and will get everyone happy around the table! It is similar to our popular Baked Mashed Potato Cakes or Baked Swiss Chard and Potato Cakes, but this time we’ll cook them on the stove in a skillet. If you’re feeling adventurous, some nice additions would be chopped spring onions, sautéed mushrooms, or French onion (Oh wait! We also have this French Onion Mashed Potato Cakes recipe!)

Key Ingredients for the Mashed Potato Cakes
- Cooked mashed potatoes: You can use leftovers for another dinner, or make them on the spot. Check our recipe for mashed potatoes.
- Egg: It helps bind the patties together.
- Garlic: Fresh and finely minced!
- All-purpose flour: Same as with the egg, plus it adds at bit of density. Do not add too much flour because the potato cakes might become stiff and crumbly–3 tablespoons only!
- Parmesan: Freshly grated parmesan is best. Avoid pre-grated cheese from the plastic shakers: too salty, no flavor.
- Seasoning: Italian seasoning, salt, and pepper.
- Parsley: Freshly chopped; adds a nice garnish for serving presentation!

Garlic Parmesan Mashed Potato Cakes

These potato cakes make for a super easy side dish, light dinner or lunch!
Ingredients
- 2 cups mashed potatoes
- 1 egg
- 4 garlic cloves, finely minced
- 3 tablespoons all-purpose flour
- 1 cup of grated parmesan + 1/2 cup for the coating
- 1 teaspoon Italian seasoning
- Salt and pepper
- Fresh chopped parsley, for garnish
Instructions
- In a large bowl add the mashed potatoes, egg, minced garlic, 1 cup grated parmesan cheese, Italian seasoning, and 3 tablespoons all-purpose flour; mix until combined and smooth.
- Place 1/2 cup parmesan in a shallow dish. Divide the potato mixture into eight equal portions and form 8 patties (you can use a ring mold to shape the patties). Roll the patties in the parmesan to coat.
- In a large skillet over medium heat, using cooking oil or butter, cook patties until golden on both sides. Season with salt and pepper to taste, garnish with fresh chopped parsley and more parmesan; serve the garlic parmesan mashed potato cakes hot. Enjoy!
