- 1 package extra firm tofu, drained, pressed at least 15 minutes, cut into 1 inch cubes
- 2 tablespoons sesame oil
- 1/4 cup tahini
- 2 tablespoons sriracha sauce (or your favorite hot sauce)
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon rice wine vinegar
- 2 garlic cloves, minced
- 1/2 tablespoon freshly grated ginger
- 3 to 4 tablespoons water
- 2 – 3 cups cooked rice noodles
- 2 tablespoons chopped scallions greens
- 1 tablespoon toasted sesame seeds + poppy seeds

Directions
1. To make the tahini tofu stir-fry: Heat sesame oil in a skillet over medium heat. Cook tofu on an even layer for about 10 minutes, flipping once or twice, until the tofu is browned and crisp on all sides.
2. Meanwhile, whisk the tahini, sriracha, soy sauce, honey, vinegar, garlic and grated ginger in a small bowl. Add 3 tablespoons of water to thin out the sauce.
3. Once tofu cubes are browned, lower the heat to low and pour the tahini sauce over the tofu, stirring gently to coat the tofu. Cook just until the sauce is hot and starts to bubble, about 1 minute. Don’t overcook or the sauce will be too thick.
4. Divide the tahini tofu stir-fry onto plates and serve with rice noodles and a side of baby spinach salad (or chopped bok-choi, shredded kale, as you want), and sprinkle with sesame and poppy seeds and chopped scallions. Enjoy! ❤️

Tips for the tahini tofu stir-fry recipe
- Pressing the tofu before cooking will help it crisp up better during the stir fry. This can be done by wrapping the tofu block in paper towels or a clean kitchen towel and placing a heavy object on top for about 15 minutes.
- Make sure to cook the tofu on an even layer in the skillet to ensure all sides are evenly browned. You may need to do this in batches if your skillet is not large enough to fit all the tofu cubes in one layer.
- Don’t overcook the tofu in the sauce – this will cause the sauce to thicken too much and become overly sticky. Just heat it until the sauce starts to bubble, and then remove it from the heat. You can always drizzle any remaining sauce over the dish before serving.
- To make your tofu extra crispy, pour boiling water over drained tofu cubes, then pat it dry before frying. This will help take out excess water.

Came out great. Substituted peanut butter as I had no tahini. Increased the amount of sauce ingredients just a bit, as I like saucey. Used mini bok choy and sweet onion. Wide rice noodles 1/2 package dry, and then soaked. Probably too any noodles, but recipe didn’t specify amount.
