Ingredients list for the Oven Baked Chicken
- 8 chicken thighs, skinless and boneless
- 1 tablespoon olive oil
- 1 stick (114g) butter, diced
- 2 – 3 bunches asparagus (35-40 spears), rinsed and trimmed
- Juice of one lemon
- 1 lemon, sliced to garnish
The seasoning mix
- 1 teaspoon paprika
- 1 teaspoon dried oregano (or thyme, or other herbs of choice)
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt (or chicken bouillon)
- 1/2 teaspoon fresh cracked pepper

Baked Chicken Thighs
Baked chicken thighs served with asparagus make for a perfect, comforting meal. Nothing complicated, nothing fancy. You only need a few minutes of prep time and just simple ingredients to have juicy tender baked chicken thighs.
This baked chicken thigh recipe is versatile as far as seasoning goes. Just keep to the method – and baking as directed. Then from there, you can adjust seasonings to your heart’s content with different herbs, spices, or blends. You can use bone-in skin-on thighs if you have those on hand.
How to Prepare Baked Chicken Thighs
- Prepare your oven: Preheat your oven to 425ºF (220ºC).
- Rinse thighs off first, then pat dry with paper towels before seasoning.
- Prepare the baking sheet: Line a rimmed baking sheet with aluminum foil or baking paper. Lightly oil with olive oil or cooking spray.
- Make the seasoning mixture: In a mixing bowl whisk together salt, onion powder, garlic powder, dried oregano, paprika, and fresh cracked pepper.
- Dry chicken thighs, toss with mixture: Arrange chicken thighs upside-down on one side of the baking sheet. Sprinkle with the seasoning on both sides, covering as much of the surface as you can.
- Arrange the asparagus on the other side of the baking sheet and drizzle with lemon juice.
- Place diced butter over chicken and asparagus.

Directions
1. How to bake the chicken thighs: Arrange the oven shelf to the middle of your oven. Preheat your oven to 425ºF (220ºC). Mix the ingredients for the seasoning in a small bowl or shallow plate.
2. Line a rimmed baking sheet with foil or baking paper; lightly oil with olive oil or cooking spray. Arrange chicken upside-down on one side the baking sheet. Sprinkle with the seasoning on both sides, covering as much of the surface as you can.
3. Arrange the asparagus on the other side of the baking sheet and drizzle with lemon juice.
4. Place diced butter over chicken and asparagus. Bake 20-25 minutes, or until chicken is golden, with an internal temperature of 165ºF (75ºC) using a meat thermometer.
5. Remove from oven and garnish with lemon slices and fresh chopped parsley, if desired. Serve the oven-baked chicken thighs immediately. Enjoy!
Recipe notes:
- You can also use chicken breasts for this recipe. If your breasts are quite large eg 8oz (250g) each, cut them in half horizontally to form 2 thin fillets. Season and use following the remaining of the recipe.
- If you like your asparagus crunchier, bake the chicken thighs for 10 minutes, then add asparagus to the baking sheet and finish cooking until chicken is done.

How much butter? Also, directions say to toss thighs with the seasoning mixture, then it says sprinkle seasoning mixture on both sides after thighs are in the baking sheet. So are you saying there will be extra seasoning after tossing thighs in it, and to use the remainder to further coat the chicken? Thanks

Love this! I like meaty asparagus though so I threw mine in after the chicken's been in for 15 minutes (after I flipped them) and they had more bite to them!

Super easy and yummy. I didn’t measure the seasonings I just sprinkled each side of chicken with the recommended seasoning. I also didn’t use asparagus I cut up potatoes, onion and frozen broccoli tossed in olive oil threw on a separate sheet I also added kielbasa I had in freezer in both sheets 10/10
