Directions
1. To make the pesto chicken: Preheat your oven to 400ºF (200ºC). Toss cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper on a rimmed baking sheet. Spread the grape tomatoes in one layer. Roast the tomatoes for about 20 minutes until blistered while preparing the chicken.
2. Season the chicken breasts on all sides with garlic powder, paprika, salt, and pepper.
3. In a large skillet, heat 2 tablespoons olive oil over medium heat and cook chicken breasts until browned on the edges and cooked through – about 5 minutes on each side. Remove chicken to a plate and set aside.
4. In the same skillet, cook onion until slightly caramelized, adding a little oil if necessary. Add garlic to the onion and cook for 30 seconds, until fragrant.
5. Add pesto and give it a quick stir to combine with the onion. Then pour in the whipping cream and parmesan, stir gently, and bring to a simmer.

Delicious, a little salty so I would cut back on the amount of added salt you use. I roasted the tomatoes with little baby potatoes & sautéed mushrooms & added all at the end, very good

Delicious! Definitely a keeper. Was a little confused when the recipe called for 1/4 cup of grated parm but in the direction, it never came up. So I just sprinkled it at the end. Other than that, it’s just amazing!!

The flavors here were great! Anything with pesto and roasted tomatoes is a winner in my book. This was definitely not a 30min meal for me though. Even cutting my chicken breasts in half they took quite a bit longer to cook

We loved this recipe! There are only two of us so I did two breasts but kept the same amount of sauce and served it over bow tie noodles. And I just smashed garlic cloves and roasted them with the tomatoes. So good!

Enjoyed the meal, will definitely make it again. I did remember to add the parmesan, used as more of a garnish at the end, but forgot about the red pepper flakes since the recipe never mentioned them. I did have to roast the tomatoes longer, will probably try at 425 rather than 400, and may increase the tomatoes as well. Very good flavor.
