Ingredients list for the Cajun Shrimp and Veggies Meal Prep
- 1 pound (450g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 medium zucchini, sliced
- 1/2 bunch asparagus, trimmed and cut in chunks
- 2 bell peppers, chopped
- 3 cloves garlic, minced
- 1/4 cup (60ml) low-sodium vegetable broth

Directions
1. To make the meal prep Cajun shrimp and veggies: In a large bowl, combine shrimp with olive oil and cajun seasoning and toss until coated.
2. Heat the oil in a large skillet over medium-high heat. Cook shrimp 3-4 minutes, until cooked through, stirring regularly. Remove from the pan and transfer to a plate.
3. In the same pan, add zucchini, bell peppers, and asparagus and fry for 2-3 minutes so they release their flavors. Then add minced garlic and cook until fragrant (about one minute). Finally, pour in the vegetable broth, and allow the sauce to reduce down slightly.
4. Divide the shrimp in meal prep containers, add the cooked veggies and sprinkle with chopped parsley, and spoon the sauce over shrimp and veggies, or keep in a separate container. Enjoy your meal prep cajun shrimp and veggies!
