Tips for cooking quick one-pan meals
There’s a lot to love about one-pan meals: less clutter, less fuss, and of course, fewer dishes to wash!
Get a large cast-iron skillet, 10-inch minimum. This ensures you have a lot of space to hold up everything while avoiding crowding the pan. Plus, cast iron retains and diffuses heat very well, so all your cooked ingredients are nice and warm when serving.
Use tongs for moving food around. When you have a lot of food in the pan, using a regular spatula can make you go “overboard” when stirring. Using a pair of tongs is a convenient way to pick, turn, and move your ingredients in the pan–especially with zucchini noodles!
Keep some liquid at hand: broth, lemon juice, water, white wine so you can adjust the thickness of any sauce very easily.
