This spinach, chicken casserole with cream cheese and mozzarella is super simple to make and so comforting! With simple ingredients like chicken breasts, spinach, garlic, cream cheese, mozzarella cheese, spices, and seasoning you’ll have yourself this delicious creamy chicken casserole in less than 40 minutes of preparation. In our opinion, this casserole isn’t complete without the bubbly mozzarella topping. It’s the perfect chicken dinner casserole for busy weeknights!

How to make chicken casserole

The method for this chicken casserole is very easy and requires only a few steps.

Arrange the marinated chicken breasts into a baking dish. Add more seasoning if you like. Note that we cut our chicken breast pretty thin to make cutlets so the chicken cooks quicker.

Spread cream cheese on top of chicken breast. It’s easier when cream cheese is at room temperature.

Top the cream cheese with sauteed spinach. We sauté the spinach first, so it renders some of its water and doesn’t make the chicken casserole soggy when baking.

Sprinkle the chicken casserole with shredded mozzarella cheese before popping in the oven at 400ºF (200ºC).

Download your spinach chicken casserole with cream cheese and mozzarella with nutrition info!

1. To prepare the spinach chicken casserole: Add olive oil, garlic, Italian seasoning, and red pepper flakes into a Ziplock bag along with 1/2 teaspoon of salt and 1/2 teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken breasts are covered in the marinade, set aside for 10-15 minutes on the counter while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 400ºF (200°C).

2. Quickly wilt the spinach in a skillet with 1 tablespoon olive oil and set aside.

3. Arrange chicken breasts drained from the marinade in a baking dish. Spread the softened cream cheese over the chicken breasts and lay spinach on top of the cream cheese. Finally, sprinkle mozzarella over the top.

4. Bake the spinach chicken casserole for 20-30 minutes. Chicken casserole is done when cooked to an internal temperature of 165˚F (75°C). Serve the spinach chicken casserole warm with a side of cauliflower rice, or baked veggies. Enjoy!

  • You can cut the chicken breasts into cubes to help the marinade coat the chicken deeper, and speed up the baking time of the casserole.
  • Freeze individual portions of the spinach chicken breasts casserole so you have a comforting dinner for evenings when you don’t feel like cooking from scratch. See instructions below for reheating frozen chicken casserole.
  • Cream cheese and mozzarella should provide enough salt so go easy with the salt in the marinade.

  • To bake the uncooked chicken casserole after freezing: thaw the chicken casserole overnight in the refrigerator and bake as directed in the instructions. We do not recommend baking the chicken casserole straight out of the freezer because it would take a very long time and not cook evenly.
  • To reheat the baked casserole after freezing: same method, thaw overnight in the refrigerator; then cover the chicken casserole with foil and bake at 350ºF (180ºC) for 20-30 minutes, or until heated through.

    This was very easy to make. Most prep work was for the marinade. I did not cut the chicken breasts I left them whole. I doubled the marinade recipe as I made 4 breasts and put 1/4 of the cream cheese brick on each breast and cooked about 10 minutes longer. Tip: be sure to cover the spinach with cheese or it dries out. This was restaurant quality taste and looked just like the picture shows. 👍🏼👍🏼

    It was a hit! I did brown my chicken a little before hand, used a little less cream cheese, put my chicken in the oven alone for a few minutes, then cream cheese and spinach back in the oven, last my mozeralla cheese until nice and golden brown, WOW chicken was moist and full of flavor!     I made this, exactly as directed. There is way too much cream cheese. And the chicken itself ends up dry and flavorless. If we make this again, I'm going to sear the chicken first and use about half of the cream cheese.

    Excellent recipe! Easy, one-dish baked chicken. I have made it three times in the last two weeks. Minor changes included using Italian blend cheese and also adding a bit of grated parmesan, omitting just mozzarella. I also added about a tablespoon of milk to the cream cheese so it would spread easier. I do marinade my pounded chicken breasts overnight in buttermilk as a rule. A recipe worthy of serving to guests.

    Being disabled, I love easy recipes. This is one of the easiest ever and is one of the best chicken dishes I have ever made. The salt was a bit heavy though and I even cut it back a tad. Next time I am cutting the salt in half. Goes great with seasoned brown rice and carrots.

    My family loves this. We changed it up a bit by adding smoked paprika to the marinade. A ton more garlic throughout the dish (marinade and spinach with minced, and the Shredded cheeses with a little garlic powder). Changed the Shredded cheese to havarti and fresh parm. So delicious! Thank you!

    Loved this recipe. I don't necessarily do keto but found many of the recipes here look yummy as well as are pretty easy to cook. I may try Ricotta cheese instead of cream cheese next time. It might not handle the time in the oven so I might brown the breasts in a skillet prior to the oven.
