Garlic Butter Sausages with Broccoli – This easy one-pan sausage and broccoli recipe is super nourishing and easy to make. Juicy sausages and crisp-tender broccoli are pan-seared and cooked to perfection in a zesty garlic, herbs and butter sauce. This perfect weeknight dinner is packed with flavor and quick to make – on the table in 25 minutes. The whole family will gobbles it up!

1. To make the garlic butter sausage and broccoli: Quickly blanch the broccoli in boiling water for 3 minutes until crisp-tender. Drain and transfer to an ice bath to stop the cooking. Drain and set aside.

2. In the meantime, lay the sausages in a skillet with 1/2 cup water. Cook half covered for 10 minutes on medium heat, turning regularly. When the water has evaporated, add 2 tablespoons butter, half the minced garlic, and red chili pepper flakes and continue cooking for a couple of minutes, until sausages have browned in the garlic butter sauce. Transfer sausages to a plate and set aside.

3. In the same skillet, lower the heat and melt the remaining tablespoon butter. Add chopped parsley, thyme, remaining garlic, Italian seasoning, red crushed chili pepper flakes, and blanched broccoli florets and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Deglaze with lemon juice, vegetable or beef stock, hot sauce, and reduce the sauce for a couple of minutes.

4. Add the garlic butter sausages back to the pan with the broccoli and reheat quickly. Spoon the sauce over the sausage and broccoli Adjust seasoning with pepper and serve the garlic butter sausages and broccoli skillet immediately, garnished with more crushed chili pepper, fresh herbs, and a slice of lemon if you like. Enjoy!

Note: You can enrich the flavors of the dish by adding a little white wine to the sauce for broccoli.

  • If you like crunchy broccoli, you can skip the blanching step.
  • If you want broccoli more tender, you can just cut up the florets in half before cooking.
  • Prick the sausage with a knife to let some of the juices combine with the sauce.

What sausage can we use?

We prefer spicy Italian sausage for this dish because it adds a nice depth in flavor. Smoked sausage of bratwurst would also work, make sure they are well seasoned.

Can we substitute broccoli for other veggies?

Of course! The recipe works pretty well with green beans (check the garlic butter sausage and green beans skillet here) or even zucchini noodles. If you like crunchy, you might also try with cauliflower florets using the same preparation steps (you can steam cauliflower in the microwave instead of blanching).

    I had some broccoli to use up as well as some sausages already in the freezer. After a Google search for recipes using those 2 ingredients, I came across this recipe. Hubby and I enjoyed it with mashed potatoes!
