Ingredients list for the Tomato Spinach Shrimp Pasta

  • 2 tablespoons olive oil
  • 8 oz (220g) medium shrimp, peeled and deveined
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika or more, to taste
  • Kosher salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 4 Roma tomatoes, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 6 oz fresh spinach
  • 3 cloves garlic, minced
  • 8 oz (220g) pasta (penne or spaghetti)
  • 2 tablespoons high-quality olive oil, optional

1. To make this tomato spinach shrimp pasta recipe: Add 2 tablespoons of olive oil to a large skillet, on medium-low heat. Add shrimp, red pepper flakes, paprika, Italian seasoning and salt in the skillet and cook on medium heat until shrimp is cooked through – about 5 minutes. Remove grilled shrimp from the skillet and set aside.

2. In the same skillet, add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic. Cook on medium heat about 3- 5 minutes until spinach wilts just a little and tomatoes release some of their juice. Remove from heat and adjust seasoning, if needed. Cover with a lid and keep off heat. 

3. Cook pasta according to package instructions, until al dente. Drain pasta and add to the skillet with the tomatoes and spinach. Reheat on low heat, mix everything well, adjust seasoning with salt and pepper. Remove from heat.

4. Once pasta and veggies are off heat, add grilled shrimp back and drizzle with good quality olive oil just before serving, for an extra taste. Serve the shrimp pasta immediately, enjoy!

This spinach shrimp pasta recipe is made with penne, shrimps, in delicious spinach tomato sauce, ready in under 30 minutes. It is healthy, super easy to make, and packed with flavor!

How to make tomato spinach shrimp pasta?

  • Keep pasta al dente because they will soak up a bit of the sauce. Also, don’t overcook shrimp at the beginning, they will dry up otherwise.  
  • Shrimp cooks fast, over-cooked shrimp is rubbery, tough and not pleasant to eat at all. Cook the shrimp stirring frequently, until the shrimp is nice and pink and opaque. This will usually take 2-4 minutes.
  • Frozen shrimp is okay for this recipe but try as much as possible to buy wild-caught shrimp. fresh wild-caught shrimp tends to have better flavor. You can use shrimp with tails on or off.
  • We use penne pasta for this recipe, but you can switch for spaghetti or fettuccini. Even linguine is good at this!
  • To make a gluten-free version: Use gluten-free pasta noodles and rinse them well before adding them to the pan with the other ingredients.

How to store and reheat shrimp pasta?

Store any shrimp pasta leftovers in an airtight container for up to 2 -3 days. To reheat, reheat very gently with a splash of chicken broth or water to keep the shrimp and pasta from drying out.

This shrimp pasta recipe can also be frozen, but we find pasta does not retain its texture as well, so we recommend avoiding the freezer if possible.

What to serve with the shrimp Pasta

Serve with a side of garlic bread and a fresh green salad. A generous dash of high-quality olive oil is also a plus, but it’s optional.

    This was so delicious. I did what Angel did. I marinated the shrimp in the seasonings, with sun dried tomatoes added. Then followed the recipe.
