Directions

1. To make the broccoli chicken recipe: In a large bowl, season diced chicken breast with Italian seasoning, crushed red pepper, and salt & pepper. Let sit while you’re prepping veggies.

2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chopped chicken breasts and sautee for 4-5 minutes or until chicken is golden and cooked through.

3. Add the garlic and saute for one minute or until fragrant. Add the chopped sundried tomatoes and broccoli and cook for another 3-4 minutes.

4. Finally, add cream cheese and shredded cheese to the skillet, give a good stir and cook for 3 minutes more to melt cheese through. Thin the sauce with chicken broth, to your liking. Serve the creamy broccoli chicken skillet with zucchini noodlescauliflower rice or pasta, or rice if you’re not on a low-carb/keto diet. Enjoy!

Tips for the creamy chicken and broccoli recipe

  • You can thin the sauce by adding a little more water or chicken broth to the skillet.
  • This recipe is all about the creamy sauce. Don’t skimp on seasoning because it is the sauce that binds this chicken and broccoli recipe together. You can add a dash of paprika or chili powder if you like it spicier.
  • If you like your broccoli more tender, blanch the broccoli florets for 2-3 minutes in boiling water and then rinse the florets in an ice bath to stop the cooking process. Drain as much water as possible before throwing in the pan.
  • You can crisp up the chicken and broccoli skillet in the oven in broil mode for 2 minutes to have these lovely golden edges – just make sure your skillet is oven-proof!

    This is so good. Love the sauce. I used frozen broccoli and cut it up in smaller pieces. I will make this again. I made with rice, corn and a yeast roll.

    Loved the one pot meal. Will definitely make this again. I didn’t have sun dried tomatoes so I grilled red and yellow peppers and cherry tomatoes and added them instead.

    OH WOW!! This is soooo good ..... eating right now as I type (((taking bite))) oh man, o.k., son and I are doing keto together and this is perfect with the fat and protein. (((another bite))) mmmmm its so creamy and full of flavor ..... might I add, its super easy to make too. We paired it with a salad .... o.k. going to finish it ..... thank you for this recipe!! So good I did have to substitute fire roasted tomato's cuz I didn't have the sun dried, and used frozen broccoli and cauliflower instead of fresh broccoli, still so amazing

    Peggy - if you click on detailed recipe, there’s a link w nutrition Donna - I used frozen broccoli (microwaved it first) - I think it turned out fine. I added a little chopped onion also. Quite yummy! Add this to my low carb repertoire.
