- 3 – 4 cups uncooked pasta shells
- 1 lb (450g) ground beef
- 1/2 teaspoon black pepper
- 1 (12 oz – 300g) jar of salsa
- 8oz (225g) cream cheese (cubed)
- 1/2 cup (125ml) beef stock
- 1/2 cup grated or shredded cheese (parmesan, mozzarella…)

Directions
1. To make the creamy beef pasta: Cook the pasta shells al dente according to the package directions; drain and set aside.
2. In a large skillet, heat a little oil and brown the ground beef with black pepper over medium heat until brown.
3. Remove the excess grease from the cooked meat and then stir in the salsa and cream cheese. Simmer for a few minutes until the sauce is well combined, adding beef stock progressively. Add cheese and stir constantly until melted and the sauce is smooth. Add more beef stock if necessary.
4. Gently toss your cooked pasta in with the meat sauce mixture and continue cooking on medium-low so the pasta can soak up a little of the sauce.

Did not have salsa so left it out! We loved it. I did add 1 cup of shredded cheese. So good! Next time I will try with salsa

I had to use Rotel since I didn't have salsa. But I think it lacked seasoning. Will try again with seasinknf the meat with cumin while it cooks or try adding taco seasoning into the cream cheese/salsa mixture.
