Tips for the garlic butter parmesan smashed potatoes recipe
- Choose smaller potatoes, rather than large. For crispy potatoes, choose your potatoes around the size of a golf ball or slightly larger
- Let the potatoes steam dry for a little while after smashing them. This ensures incredible crispiness!
- You can swap out the Italian seasoning in the baked potato recipe for parsley, rosemary, or thyme. Oregano is milder in flavor but also works pretty well.
- Garlic and onion powder are also great additions to the garlic butter parmesan mixture. They complete the garlicky flavor and season the roasted potatoes perfectly.

Directions
1. To prepare the garlic butter parmesan smashed potatoes: Pre-heat your oven in broil mode (or grill) to 400ºF (200ºC)
2. Place potatoes in a large pot of salted water. Bring the pot to a boil and cook, covered for 30-35 minutes or until potatoes are just fork-tender. Drain well and set aside.
3. Lightly grease a large baking sheet with a teaspoon of oil or oil spray. Arrange the cooked potatoes onto the baking sheet and use a potato masher to flatten the potatoes in one piece lightly. Do not push too hard, or potatoes will end up mashed.
4. In a medium bowl, mix the butter, salt, pepper, minced garlic, parmesan, and Italian seasoning. Pour the mixture generously over each potato using a tablespoon.
5. Transfer the baking sheet with potatoes in the oven and broil (or grill) until potatoes are golden and crispy – about 10-15 minutes. Serve the garlic butter parmesan smashed potatoes with parsley and more parmesan if you like. Enjoy!
