- Sausage: Bratwurst or Italian style; smoked sausage will work well also. Avoid sausages filled with sugar or maple syrup (breakfast-style), as they won’t pair well with the sauce.
- Green beans: We like using fresh stringless beans. Trim both ends, it’s going to be way easier to chew on! We admit stringing and trimming green beans can be time-consuming, but you can do it ahead of time, and it’s an excellent opportunity to chat with your significant other or family members ;)
- Butter: Unsalted butter, preferably, so you can better control the amount of sodium in the recipe.
- Garlic: Fresh, peeled, and minced.
- Seasoning: Italian seasoning, salt, pepper, red chili pepper flakes.
- Lemon: Juice and slices, for garnish.
- Vegetable or beef stock
- Hot sauce: We like Sriracha for the tangy twist; harissa or Cholula are also great options.
- Herbs: Chopped parsley and fresh thyme.

How to make the sausage and green beans skillet
The idea here is to cook everything in just one pan (except blanching the green beans, but that’s optional). All of the cooking juices from the sausage will meld and infuse the green beans. Here’s the breakdown:
- Blanch the green beans: This makes them tender and ready to be sautéed in the skillet. If your green beans are super thin, you can skip this step.
- Cook the sausage and make the sauce: We cook the sausage in a bit of water for even cooking. Sausage will render some fat at the end, and this will provide the perfect base for the garlic butter sauce.
- Cook the green beans and deglaze: The blanched green beans are tossed in the sauce from the previous step, enriched with herbs and spices. All of this in the same skillet!
- Add the sausage back to the skillet and reheat quickly. Ready to serve!

- For a leaner version of this recipe, prick the sausages with a fork or knife before cooking in water. Then discard the water with the rendered fat halfway through cooking. Don’t wait for the water to evaporate completely.
- We recommend using a sturdy cast-iron skillet for all of our one-pan recipes: The heat will be stored and distributed evenly, meaning the sausage and beans will cook evenly, and the sauce won’t set in between steps.
- If you’re not used to this flavor combo, add lemon juice by increments so the sauce doesn’t get too acidic all at once.

Garlic Butter Sausages with Lemon Green Beans

This easy sausage recipe with green beans is a complete dinner made in just one-pan!
Ingredients
- 1 lb (450g) sausage (Bratwurst or Italian style)
- 1 lb (450g) fresh stringless green beans, trimmed
- 3 tablespoons butter, divided,
- 5 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Juice of 1/2 lemon + lemon slices, for garnish
- Salt and fresh cracked pepper
- 1/4 cup (60ml) vegetable or beef stock
- 1 tablespoon hot sauce, optional (we used Sriracha)
- Crushed red chili pepper flakes, optional
- 1/2 cup fresh chopped parsley
- 1 tablespoon fresh thyme leaves
Instructions
- Arrange green beans in a microwave-safe dish with 1/2 cup (125ml) water. Cook covered in the microwave for 8-10 minutes, until almost done but still crisp.
- In the meantime, lay the sausages in a skillet with 1/2 cup water. Cook half covered for 10 minutes on medium heat, turning regularly. When water has evaporated, add 2 tablespoons butter, half the garlic, and red chili pepper flakes and continue cooking for a couple of minutes, until sausages have browned in the garlic butter sauce. Transfer sausages to a plate and set aside.
- In the same skillet, lower the heat and melt the remaining tablespoon butter. Add chopped parsley, thyme, remaining garlic, Italian seasoning, red crushed chili pepper flakes, and pre-cooked green beans and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Deglaze with lemon juice, vegetable or beef stock, hot sauce, and reduce the sauce for a couple of minutes.
- Add garlic butter sausages back to the pan and reheat quickly. Adjust seasoning with pepper and serve immediately, garnished with more crushed chili pepper, fresh herbs, and a slice of lemon if you like. Enjoy!
Recipe Notes
- You can enrich the flavors of the dish by adding a little white wine to the sauce for the green beans.
