Directions

1. To make the garlic butter chicken with potatoes: In a large bowl, combine the chicken strips with low-sodium soy sauce, olive oil, pepper, and hot sauce. Set aside to marinate while you cook the potatoes.

2. Parboil the potatoes in boiling salted water for 8 minutes. This will accelerate cooking time in the skillet and ensure a nice golden crust on the potatoes.

3. In a large skillet over medium-high heat, mix 1 tablespoon olive oil and 1 tablespoon butter. When butter is melted, add drained potatoes. Cook potatoes for about 4 minutes, stir and cook an additional 4-5 minutes until the potatoes are golden and fork-tender. Transfer sauteed potatoes to a plate and set aside.

4. Keep the same skillet over medium heat and add the remaining 2 tablespoons butter. Lay the chicken strips in one layer in the skillet, keeping the drained marinade for later. Add garlic and red chili pepper flakes to the chicken. Cook chicken strips on each side for 1 minute each until nicely browned – adjust timing depending on how you like your grilled chicken.

5. Stir in the reserved marinade and cook with chicken until the marinade is cooked. Add the fresh herbs and give a quick stir. Then add the sauteed potatoes back to the pan and heat through. Adjust seasoning with salt and pepper if necessary.

6. Remove from heat and serve immediately your Garlic Butter Chicken with sauteed Potatoes, garnished with more crushed chili pepper, fresh herbs, and a sprinkle of parmesan cheese over the chicken and potatoes if you like. Enjoy! ❤️

Tips for the chicken and potatoes recipe

  • To make the strips: cut chicken breasts in half, then slice lengthwise to avoid cutting across the fiber. Cutting across the fiber can result in moisture loss when cooking the chicken. You want your chicken golden brown, but not dried up.
  • Do not overcrowd the pan when cooking the chicken strips, otherwise you’ll end up with steamed chicken instead of having this delicious crisp-golden sear on the meat. Proceed in batches if necessary, setting cooked chicken aside; you will reheat all of it together with potatoes at the end.
  • If you like a sauce with your chicken and potatoes, try this: 1 tablespoon mayo + 1 tablespoon Sriracha, it will spices things up and it’s delicious!

    Cut soy in half, too much salt. Topped up with chicken stock. Added 1 tsp of honey to balance the heat from Sriracha and pepper flakes. Also blanched Brussel sprouts with the spuds. Cooked them all the same. Amazing dish but cut back on the soy!

    I make the chicken all the time - we use cut thighs, breasts, and tenderloins, all to great effect. I'm also dairy free as I'm nursing a baby with CMPA, so I make this with a vegan butter-shaped fat. I usually cut the chicken in chunks and sorta stir fry it, adding broccoli or green beans. I don't think the potatoes are very successful here. I just parboil them and then put them on a parchment lined tray at 425° with some oil and seasonings (kosher Ranch powder suits my dietary things) and roast them crisp while I'm stir frying the chicken. Thanks for this amazing sauce and marinade recipe!

    I love this recipe! I tend to make a bit more marinade just for the flavor. Something I did since i'm tracking calories is I subbed half the potatoes for carrots. Still starchy but a few less calories so I can have a full bowl and not worry about a tiny portion! Love this recipe!

    This was pretty good. I did find it took longer to get the potatoes crispy enough than suggested and also it was a little too salty for us. This would be down to the soy sauce - I didn’t add any extra salt. If I made it again I think I’d try a low sodium soy sauce.

    Wow this recipe is bomb! Includes all ingredients I frequently have on hand. Super easy to prep, cook and clean up. I made the mistake of slicing the breasts against the grain since I’m used to grill in steak, so I made sure to put a real hot sear on the chicken as they went into the skillet. Definitely recommend this recipe.

    This recipe is absolutely delicious! I was just looking for something to make with my extra chicken and potatoes when I found this, but I'm adding it to our dinner rotation. I will say though that I think it's funny that it says "almost zero cleanup" when that was not at all my experience. In fact, this one dish basically filled my sink. (Since you'll need multiple dishes. For marinating the chicken, to store the cooked potatoes before re-adding, cutting boards and utensils, the frying pan, etc). So do expect to need to do the dishes afterwards. But the dish itself is fantastic!

    Family favorite! We use coconut aminos instead of soy sauce, and adjust the hot sauce (we also use Sriracha) according to spice preferences and find it not too salty. I actually make the potatoes in the skillet instead of boiling them...but that's just our family preference!

    This was good and easy to make, however the chicken was incredibly salty even with not adding any salt to anything other than the water that the potatoes boiled in. Definitely think less sodium soy sauce is probably a better option.

    Loved it. It required a lot of attention and prep, but it was so worth it. I added root veggies with the potatoes and it didn’t hurt it at all. Used low salt soy sauce! Perfection!

    I tried this tonight as I has a load of potatoes to use. I thought it would be too salty or spicy (for hubby) but it was so tasty! The chicken was flavoursome and really moist, the potatoes were nice and crispy! I only had dark soy and dried herbs but it was still a great recipe to try and we ate it with homemade coleslaw.

    Good easy recipe. Halved the recipe and skipped the marinade portion and turned out fine. Substituted 1 tablespoon of gochujang paste for all sources of heat and the only salt in the dish came from the butter and soy sauce. Good heat level for myself and a little on the salter side but overall still a good recipe.

    My family is not big on hot sauce so I left that out, but it was really good. It did not look as good as the picture but tasted just fine. It was our Thanksgiving dinner as we are waiting for the Turkey to go on sale this weekend.
