Directions

1. To make the parmesan spinach mushroom pasta skillet: Cook the pasta in salted water until al dente, according to the package instructions.

2. Heat 2 tablespoons of olive oil in a large skillet. Add the mushrooms and sauté for about 3 minutes until lightly browned.

3. Add the chopped garlic and cook for about 30 seconds longer. Then deglaze with a bit of vegetable broth. Reduce the heat and cook for about 1-2 minutes longer. Remove mushrooms to a plate and set aside.

4. In the same skillet, add the spinach and cook for 2 minutes until wilted. Adjust seasoning with salt and pepper.

5. Once the pasta is ready, pour off the cooking water. Push spinach on the side in the skillet and add mushroom back, then put drained pasta in the pan and toss to combine. Add parmesan, the last tablespoon of olive oil, and Italian seasoning, and give a quick stir. Serve the parmesan spinach mushroom pasta with red chili pepper flakes and more parmesan, if you like.     This is a lovely dish... I started with 1 tsp of butter in my pan and fried brown mushrooms just for a couple of minutes. Then add a quarter of a small onion diced and fried all until the onions are translucent. I used chicken stock and then at the end used my noodle water to add more water to steam the spinach down. Be careful I did this is two batches and they got over done. I loved it but my husband said it reminded him of his mother's spinach. Oooops. LOL.. I used a tiny pinch of Cayenne Pepper instead of the red pepper flakes. I didn't have time to order a rotisserie chicken or make any tenderloin so I added a can of chicken. This would have gone really well with Italian sausage I think. May try that sometime. All in all.. easy. Pretty fast. Also, you can add just about anything to it. Oh also I added cream like someone above said to do. About 1/4 cup or less. Everyone loved it!

    This was easy and fun to make! I noticed it lacked a little flavor with just using the seasonings listed. I added 1/3 stick of butter for more creaminess and it was perfect. I also added fresh shredded Parm right into the skillet.

    A nice recipe! I added about 6 oz of spinach, instead of the 10, which to me seemed a bit overwhelming. I sautéed the mushrooms in butter for for flavor, then added the garlic to that. I drained the juice (from the shrooms) and used it to cook the spinach. Then drained juice before mixing together. I also added about 1 cup Parmesan cheese.

    This was quite tasty. I did add some sausage to it to make it more of a main dish, but stuck to the original recipe otherwise. It called for 3 cloves of garlic……… whoa!!! Way too much ( and we are garlic lovers!) Next time, we will cut way di n on that! Other than that it was delicious! ( pass the Tums !!)

    Instructions call for 1/2 cup vegetable broth. Instructions in step 3 says to add a BIT of vegetable broth. Where do you add the rest of the vegetable broth?

    So easy to make and tastes is very good. Recipe doesn’t need expensive ingredients and most likely you already have everything right in your cupboard. I did find it’s best to eat it immediately because the pasta gets dry quickly. To compensate I just added a little olive oil and tossed. If there are meat eaters in the family add sliced chicken breast.

    Too many steps, and too spicy. I normally just sautée assorted veggies with garlic in olive oil. Then I just add in the pasta and hit it with a little olive oil. Simple and easier than this. Also, there is another recipe on this site with onions and heavy cream, but otherwise identical. Huh?

    A keeper, hubby & I loved this dish! I tweaked it a bit as I added more mushrooms and I added a heaping TBSP of Better Than Bouillon paste to 1/2 C. of hot water. I would add more spinach (roughly cut in half) and maybe sliced up yellow pepper next time.

    This was alright. I followed the recipe exactly, but the spinach isn't enough to go up against so much pasta. You end up with a lot of just pasta bites. I'm adding some roasted red peppers, truffle oil, and more spices.

    Thank you for sharing this recipe! I added a few items, for some extra flavor and umpffff..... 1. I added diced onion and sautéed with the mushrooms for extra flavor. 2. I also reserved and added some of the pasta water about 1/2 cup to provide a little more sauce with the Parmesan. 3. I also added about 1/4 - 1/2 cup of cream to give the pasta some richness. Needless to say my “meat eating” husband loved it, and so did I! This will become a regular weekly recipe in our home! Thanks for sharing!!
