This keto breakfast recipe is packed with protein and so convenient for busy mornings - The perfect meal-prep option for on the go.
Ingredients you need for the Easy Meal Prep Keto Breakfast
Directions
1. To prepare this Meal Prep Keto Breakfast recipe: Preheat your oven to 400°F (200°C). Grease a 6 count muffin pan with oil or non-stick cooking spray. Set aside.
2. In a large mixing bowl, crack in eggs and whisk together with salt and black pepper.
3. Stir in tomato, bell pepper, ham, scallion, cheddar cheese, Italian seasoning, and red chili pepper flakes (if using). Divide evenly into muffin cups filling each about 2/3 full. Top with more ham diced and grated cheddar cheese if you like. Bake your Keto breakfast egg muffins in the preheated oven for 12-15 minutes, or until set. Allow the egg muffins to cool down on a wire rack.
4. For the meal prep keto breakfast: In meal prep containers, divide the almonds, berries, cheese, and keto breakfast egg muffins. Enjoy! ❤️

What is a lazy Keto diet?
Lazy Keto (sometimes called “dirty” or “easy” Keto) is a variation of the ketogenic diet where you don’t worry too much about tracking your macros.
