  • Shrimp: Large (size 16-20 preferably), wild-caught, fresh or frozen (thaw in cold water)
  • Spices: garlic, ancho chili powder, cumin, paprika, coriander, salt, and pepper.

  • Place the shrimp and vegetables on a rimmed baking sheet.
  • Sprinkle over the spices.
  • Drizzle with olive oil and toss to combine everything.
  • Bake in the oven at 400ºF (200ºC) until shrimp is cooked through and vegetable is tender, tossing once halfway through. Easy!

Directions

1. To make the sheet pan shrimp: Preheat your oven to 400°F (200°C). Lightly oil a rimmed sheet pan.

2. In a small bowl, combine garlic, chili powder, cumin, paprika, coriander, salt, and pepper, and set aside.

3. Throw the shrimp on the sheet pan, sprinkle generously with the spice mix, drizzle with olive oil. Toss to combine and spread the shrimp in one layer over the sheet pan.

4. Roast the shrimp in the preheated oven, tossing once halfway through until shrimp have cooked through – about 8 – 10 minutes. You can crisp up the shrimp by using the broiler for the last 2 minutes.

5. Drizzle lemon juice evenly over the baked shrimp and sprinkle with fresh cilantro and red chili pepper flakes. Serve the sheet pan shrimp on rice with a side of steamed veggies such as broccoli. Enjoy! ❤️
