- 1/4 teaspoon cumin
- 1/2 teaspoon salt, divided

Directions
1. To make the salsa Fresca chicken bake: Preheat the oven to 400˚F (200ºC). Chop chicken breasts into small pieces. In a salad bowl, combine tomato, onion, jalapeño, cilantro, and lime juice with 1/4 teaspoon salt.
2. Arrange the chicken pieces flat in a large baking dish and season evenly with cumin, garlic, red chili pepper flakes, salt, and pepper. Give a quick stir to combine the chicken evenly with the seasoning. Cover chicken pieces with the diced tomatoes, onion, and jalapeño, then top with shredded mozzarella.
3. Bake the salsa Fresca chicken on the middle rack for 25 – 30 minutes or until chicken is cooked through and no longer pink (internal temperature of 165˚F – 74ºC). .I went with half a teaspoon of spice for each quarter teaspoon and the flavor was still pretty mild. Final product was swimming in water - I will definitely drain the sauce next time before adding, and press some of the liquid out of the tomatoes. Not enough mozzarella and after 20 minutes mine had not browned. May finish it off under the broiler next time. Made it with mashed sweet potatoes flavored with smoked maple syrup.

this was okay! turned out a bit water and didn't have as much flavor as I'd hoped, needed a lot of toppings (I did it on tortillas).
