Directions

1. To make the creamy chicken breasts and spinach recipe: Thoroughly season chicken breasts with salt, pepper, and 1/2 teaspoon oregano on both sides.

2. In a large skillet, melt 2 tablespoons butter with a bit of oil from the sun-dried tomatoes over medium-high heat. Add chicken breasts and cook for about 4 minutes on each side until browned. Once done and no longer pink, transfer grilled chicken breasts to a plate and set aside.

3. To make the creamy spinach parmesan sauce, add the remaining tablespoon butter to the same pan. Cook onion, garlic, 1/2 teaspoon oregano and sun-dried tomatoes. Slowly add chicken broth, heavy cream, and Parmesan cheese and mix to combine until smooth while simmering for 2-3 minutes. Adjust seasoning with salt and pepper.

4. Add spinach to the mixture and continue cooking until wilted. Add the chicken breasts back to the pan and reheat for 2-3 minutes. Serve the creamy chicken with spinach and parmesan sauce immediately, garnished with fresh chopped parsley. Enjoy!

Tips for the chicken breasts and spinach recipe

  • Remove chicken breasts from the refrigerator about 15 minutes before cooking to bring them close to room temperature.
  • Season chicken just before cooking to prevent drawing out moisture and drying out the meat.
  • If you have large chicken breasts, pound them or slice them horizontally to make the thickness even. Chicken will cook faster this way.
  • You can sub crispy bacon instead of sun dried tomatoes for a nice flavor.

    Made this last night. It was excellent and the whole family loved it. I cut down on the sun dried tomatoes quite a bit because my husband isn't a fan of their flavor. But I still added some and I used the oil which I think was key. This is a keeper!

    I have made this recipe too many times to count. I’m making it now, but the time on cooking breasts is entirely wrong. I would suggest cutting the breasts in half to cook at that time, otherwise your chicken is raw inside.

    My whole family loved this dish. I actually ended up making it at the last minute instead of slow cooking it. Which took about 30 minutes. Easy Peasy. I served it with Cauliflower Breadsticks I found in the frozen section of the market, which was great for dipping in the sauce.

    Made this recipe for dinner tonight, and really enjoyed it! It was pretty easy to make and tasted yummy. I do wish that the instructions told a specific amount of time for cooking the onions/garlic/tomatoes, I cooked them for maybe 3-5 minutes and that seemed to be fine.
