- 1 scallion, chopped

- 1/3 cup Greek yogurt (or mayonnaise) + 1/3 cup water
- 4 ounces cheddar cheese, shredded

Directions
1. To make the broccoli pepperoni salad meal prep: In your meal prep containers, arrange broccoli, pepperoni (or bacon). Divide cheese into small cups, and diced red onion, tomatoes, jalapeño, and scallion in another set of cups.
2. In a glass, combine Greek yogurt, black pepper (or mayonnaise) and water, stir well until smooth. Divide into small plastic cups.
3. Tuck the cups into each meal prep container with broccoli and pepperoni. Refrigerate the pepperoni and broccoli salad until ready to eat. When ready to eat, combine everything together. Enjoy!
