Chicken cauliflower casserole recipe

This chicken casserole with cauliflower is a fantastic dish for the family and a good way to get everyone to eat their veggies. If you have leftovers, they reheat very easily and can even be kept in the freezer for weeks. Who wants a warm and creamy chicken cauliflower casserole on the menu tonight?

How to make the chicken cauliflower casserole

For this casserole with chicken and cauliflower, we use cooked chicken such as rotisserie chicken, or chicken leftovers you might have from another meal. You can buy cauliflower rice in bags at the grocery store, or use a box grater or a food processor to make your own cauliflower rice. Cook the cauliflower rice in the microwave, then squeeze out any excess liquid. Combine chicken, cauliflower, cream, cream cheese, spices, and seasoning into a large bowl. Then spread out the chicken and cauliflower mixture into a baking dish and sprinkle with cheese. Pop the cheesy chicken cauliflower casserole in the oven for 25 minutes at 400ºF (200ºC) and you’re done!

Directions

1. To make the chicken and cauliflower casserole: Preheat your oven to 400ºF (200°C). Lightly spray a 9×13-inch pan with cooking spray and set it aside.

2. Remove the skin from rotisserie chicken and discard. Remove the meat from the bones and chop.

3. Cook cauliflower rice for 7 minutes in the microwave with 1/4 cup water. Allow to cool down for a couple of minutes. Discard excess water for the cooked cauliflower.

4. In a large bowl, combine chopped chicken, cream, cream cheese, onion, minced garlic, pepper, paprika, chicken stock, and cauliflower rice. Pour the chicken mixture into the prepared pan and top with shredded cheddar cheese.

5. Bake the casserole uncovered for 20 minutes. Allow to rest for 5 minutes, garnish with fresh chopped parsley, and immediately serve the creamy chicken and cauliflower casserole. Enjoy! ❤️

Tips for the chicken cauliflower casserole recipe

  • Chicken and cauliflower casserole can be bland, so don’t skimp on the spices and seasoning. An additional dash of Cayenne pepper can go a long way for this creamy chicken and cauliflower casserole.
  • After cooking the cauliflower rice, squeeze out some of the excess liquid because the casserole would end up watery. Transfer to cooked cauliflower rice into a strainer and gently press it with a flat spoon.
  • Cream cheese and chicken stock should bring in enough salt in the chicken cauliflower casserole, but keep on tasting while you prepare the mixture, and adjust to your liking.
  • If you like those yummy, crispy browned bits. Broil, the cauliflower chicken bake for a couple of minutes after regular cooking time.

This chicken cauliflower casserole freezes very very well so you can keep it for up to 3 months in your freezer. Thaw overnight in your refrigerator and reheat. Note that the casserole will be more watery because cauliflower renders some water when thawing.

    I had to modify a bit because couldn't find a rotisserie chicken. I used fully cooked chicken breasts from the frozen foods section and they worked perfectly. I also added broccoli and mushrooms to mine and made it a double batch. It came out GREAT! Smelled wonderful and tastes wonderful!

    This is one of my favorite recipes. I've made it often. I use 4 cups frozen riced cauliflower rather than fresh. It works great and much less work. No need to parboil the frozen cauliflower.
