This roasted chicken bites recipe is ridiculously easy to make and packs a maximum of flavor. Ready for a new chicken dinner winner?
- Make sure to dice chicken breast to regular size to ensure even baking.

Directions
1. To make the oven-baked chicken bites: Preheat your oven to 420°F (220ºC) conventional. Cut chicken into 1-inch cubes.
2. In a small bowl, combine all seasonings (salt, pepper, paprika, cayenne pepper, garlic powder, onion powder, chicken stock, and Italian seasoning). Arrange chicken in a baking dish and sprinkle with the seasoning mix. Drizzle a tablespoon of olive oil and toss chicken cubes with the seasoning to coat on all sides. Speck seasoned chicken with butter cubes.
3. Bake seasoned chicken in the preheated oven for 16-18 minutes, or until internal temperature reaches 165°F (75°C) using a meat thermometer.
After 8-10 minutes, stir the chicken bites with a spoon for even baking.
Once done, the chicken bites should be golden with crisp edges.
For crispier chicken bites, switch to broil on high for the last 2 minutes of cooking until golden.
4. Remove the baking dish from the oven, sprinkle chicken with fresh chopped parsley, and let rest for 5 minutes before serving.

I had a 2.4lb chicken breast pack and cut it up. Mixed all the spices together with less cayenne pepper and I had no chicken stock seasoning. For us, it was great. I coated all the chicken with EVOO in a bowl and then mixed in the spices. I forgot the corn starch and when it was time for dinner I remembered so I sprinkled some all over the chicken and mixed again. So glad I did this. The starch made a super great gravy. OMG, yum! I will say, even though I halved the cayenne spice, it was still somewhat spicy and some of my family did not like that. I might separate at the ending next time so they have no cayenne spice.

This recipe was so easy and absolutely delicious! My family loved it, served with basmati rice & mixed veggies. I will probably double it next time so I can have leftovers! I went without the powdered stock because I didn’t have any, but I don’t think it affected the flavor.

I made this recipe and I love it. I love it so well just as it is but I went ahead and made a shaker full of the seasoning so I don’t have to get out all those bottles out again. Thank you so much for this. So enjoyed this recipe. I love savory and so many chicken recipes have something sweet in them. This is perfect. Don’t forget to add the starch to your seasoning mix.
