Try this chicken parmesan casserole, smothered in a rich tomato sauce and melted mozzarella cheese! Ready on your table in 30 minutes or less.
Ingredients
- 2 boneless skinless chicken breasts, cut lengthwise
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt and fresh cracked pepper
- 1/2 teaspoon crushed red pepper flakes, optional
- 1 cup marinara (or any tomato sauce, make sure it's no sugar added)
- 1 cup Parmesan, grated
- 1 1/2 cups mozzarella, shredded
- 1/2 cup pork rind, crushed, optional
- 1 tablespoon freshly chopped basil, for garnish
Instructions
- On a shallow plate, marinate chicken breasts with olive oil, garlic powder, salt, pepper, Italian seasoning, and crushed chili pepper flakes for 5 minutes.
- In the meantime, preheat the oven to 400ºF (200ºC) and lightly grease a baking dish with oil, cooking spray, or butter.
- Spread the chicken in the greased dish and pour the tomato sauce over it. Top with Parmesan and shredded mozzarella. Lightly sprinkle the crushed pork rinds over the top.
- Bake the chicken parm casserole for 25 minutes, until chicken is cooked through and cheese is melted and bubbly. Sprinkle with chopped basil and serve immediately. Enjoy!

This was really good. All 4 of us ate it, which with 2 young ones, is a wonder! :) I used a whole packet (.7oz) of dry Italian seasoning, cut up the chicken into chunks so it would cook faster, and we added Italian meatballs, too. Served over wheat spaghetti noodles and it was a fav. It's going in the recipe book. Thank you for the recipe!
