  • Prep & cook the veggies – Preheat your oven, fry and crumble the bacon, and steam (or microwave) the cauliflower and broccoli until tender.
  • Mix the casserole base: combine sour cream, cream cheese, mayonnaise, and black pepper. Then, fold in steamed veggies, half the bacon, half the cheese, and some parsley.
  • Bake & finish – Transfer to a baking dish, top with the remaining cheese and bacon, cover with foil, and bake until bubbly. Then, uncover and brown for a couple of minutes for a crispy top. Serve hot!

This cauliflower broccoli casserole is as delicious as a side or main dish! Perfect for those who just want a veggie dish without all the rice and potatoes to add carbs. Here are a few tips to make it perfect.

  • You can also include diced carrots and other hardy vegetables, such as celery, that won’t wilt during baking.
  • You can use frozen vegetables, but you’ll need to thaw and drain them a bit before baking. Otherwise, add 5 to 10 minutes to the baking time. and cut a little on the sour cream to avoid the dish getting too watery.
  • This casserole recipe can be made with all cauliflower, all broccoli, or any combination of the two.
  • Other great cheeses to pair with this cauliflower broccoli casserole are Gouda and Gruyère. Feel free to mix them up and have fun!
  • Glass or Pyrex is usually your best choice when baking a casserole. They take longer to heat up, but transmit heat very well and get super hot.

Directions

1. Preheat your oven to 370ºF (190ºC).

2. Fry the bacon in a large skillet until crispy and crumble. Drain from fat and set aside.

3. Steam cauliflower and broccoli until tender, about 15 to 20 minutes. Or nuke in the microwave with 1 cup of water for 7 or 8 minutes.

4. Combine the sour cream, mayonnaise, cream cheese, and black pepper in a large bowl. Add the steamed cauliflower and broccoli florets, half of the bacon, 1 cup of the cheese mix, and half the parsley and mix well to combine.

5. Transfer to a baking dish lightly oiled and top with the remaining cheese, and the other half of the bacon.

6. Cover the baking dish with foil and bake for 20 minutes. Remove the aluminum foil and bake another 5-10 minutes or just until cheese is bubbly and beginning to brown. Serve the loaded cauliflower broccoli casserole immediately. Enjoy!

How to make the broccoli cauliflower casserole ahead

To make this loaded casserole ahead of time, prepare as directed through step 5, then store everything covered in the refrigerator. Remove from the refrigerator at least 30 minutes before baking, cover with foil, and bake the broccoli cauliflower casserole as directed.

How long to keep the cauliflower broccoli casserole

    My husband and I love this recipe. I would like to double it for a family get together-but I am confused. When I hover over the 2x it doesn't increase the amount of broccoli or cauliflower?? Is this correct?

    Two more things: I steamed my veggies for 8 minutes and they were perfect. I also looked online and what I read was that it's about 5 cups of broccoli and cauliflower so that's what measurement I used.

    I made this last night, adding the onion as someone else suggested. I totally forgot the heavy cream and added some garlic powder and a little Greek seasoning. This was the best recipe!! It's definately a keeper and one I'll be making often.
