Directions

1. To make the loaded cauliflower broccoli casserole: Preheat your oven to 370ºF (190ºC).

2. Fry the bacon in a large skillet until crispy and crumble. Drain from fat and set aside.

3. Steam cauliflower and broccoli until tender, about 15 to 20 minutes. Or nuke in the microwave with 1 cup of water for 7 or 8 minutes.

4. Combine the sour cream, mayonnaise, cream cheese, and black pepper in a large bowl. Add the steamed cauliflower and broccoli florets, half of the bacon, 1 cup of the cheese mix, and half the parsley and mix well to combine.

5. Transfer to a baking dish lightly oiled and top with the remaining cheese, and the other half of the bacon.

6. Cover the baking dish with foil and bake for 20 minutes. Remove the aluminum foil and bake another 5-10 minutes or just until cheese is bubbly and beginning to brown. Serve the loaded cauliflower broccoli casserole immediately. Enjoy!

  • You can include diced carrots, as well, or any other hardy vegetables such as celery, that won’t wilt during the baking process.
  • You can use frozen vegetables but you would need to thaw and drain them a little before baking. Otherwise, add 5 to 10 to the baking time. and cut a little on the sour cream to avoid the dish getting too watery.

    Delicious! Had a request for the recipe after serving it to family. I only steamed the veggies in the microwave for about 3 minutes (in two batches) as I didn't want them mushy after cooking the casserole. And I used a Colby/Mont Jack combo for cheese. Super good!

    Definitely need to flavor it up yourself. I sauté red onion in a little bit of the bacon grease and add that to the mix along with about a Tablespoon of granulated garlic and a Teaspoon of crushed red pepper flakes and a 1/4 teaspoon cayenne.

    I thought I followed the directions but turned out dry. Eight minutes in the microwave got the vegetables quite soft. Taste was ok but will have to do some modifications. Perhaps if you gave weights for the veggies instead of 1/2 a head may be helpful. Also the 10 minutes after Removing the foil did not brown the casserole.

    I am making dinner for 14 tomorrow to celebrate my mother-in-law's birthday with all the family.
