- 16 asparagus stalks, trimmed
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika

- 1- 2 tablespoon extra-virgin olive oil
- 1 tablespoon lemon juice + lemon zest (zest is optional)
- Fresh chopped parsley, for garnish

Directions
1. To make this chicken casserole recipe: Arrange oven shelf to the middle of your oven and preheat your oven to 400ºF (200°C). Oil a casserole dish with nonstick cooking spray.
2. In a small bowl, mix together salt, pepper, garlic powder, and paprika.
3. Arrange chicken breasts on the casserole dish and season chicken with spice mixture.
4. Combine olive oil, lemon juice, and zest. Pour 3/4 of the mixture over the chicken. Arrange the asparagus over the chicken and drizzle the remaining olive oil and lemon juice. Season with extra salt and pepper, if desired.
5. Top with shredded mozzarella cheese and bake for 20 minutes, until the chicken is cooked through or reaches the internal temperature of 165ºF (75ºC). 3 minutes before the end, switch to broil until the chicken is golden and the asparagus is cooked. Garnish with chopped parsley and red chili pepper flakes, and serve the chicken asparagus casserole immediately. Enjoy!

Tips for the asparagus chicken casserole recipe
- You can blanch asparagus ahead of time if they are thick, and just assemble the chicken casserole at the last minute before baking.
- The cooking time for the casserole will depend on the thickness of your chicken breasts, that’s why we cut them horizontally. You can also pound the chicken breasts (gently!) to get them to an even thickness. If using full chicken breasts, bake for 10 minutes more, until done.
- If you want a crisp, crunchy topping, sprinkle your chicken casserole with breadcrumbs. Panko is wonderfully flaky and delicate while crushed pork rind might be a good option for those following a low carb or keto diet.
- The chicken and asparagus casserole is easy to reheat the day after. Simply cover with foil and put in the oven at 370ºF (190ºC) for 10 – 15 minutes until heated through.
- You can also freeze individual portions of the chicken casserole in freezer containers so you have a comforting dinner for evenings when you don’t feel like cooking from scratch. To use, partially thaw in your refrigerator overnight then bake to reheat completely.

Loved this recipe. Easy and very tasty. Didn't have any lemon so I skipped that and with the other herbs I used dried thyme. I had sliced the breasts to make four pieces. Cooked in about 15 minutes with five minutes under the broiler. Will definitely make again.
