Directions

1. To make the Baked Parmesan Zucchini Bites: Preheat oven to 425ºF (220ºC) and line a baking sheet with parchment paper or aluminum foil. Wash, trim, and cut zucchini into ¼ inches thick slices. Arrange the zucchini slices on the prepared baking sheet.

2. Drizzle zucchini slices with olive oil, then top with tomato, then sprinkle with Italian seasoning and grated parmesan. Season with salt and pepper

3. Bake the zucchini bites in the oven for 10 – 15 minutes, until tender and cheese is melted. Remove the baked parmesan zucchini bites from the oven and serve immediately, sprinkled with chopped parsley or basil if you like. Enjoy!

These baked zucchini bites are perfect for that zucchini stash you’ve got goin’ on. Here are a few tips to make the baked parmesan zucchini bites:

  • Instead of baking at 400ºF, you can turn on your broiler and move the pan up to the very top rack. Broil on high for 2-3 minutes, keeping an eye on it, until it is as brown and crispy as you like.
  • The thinner, the crunchier: While these zucchini rounds are not designed to be crispy, the crunchiness of these zucchini depends on how thin you slice them. If serving as an appetizer, you can slice them super thin, however, if serving as a side dish or snack, go for 1/4-inch thick.
