My husband and I love this recipe. We didn't have sundried tomatoes on hand the first time around, so we used fire-roasted canned diced tomatoes. Delicious! Also, my body dislikes Kale, so we substitute it with spinach. I also like to add diced radishes to make the soup heartier and keep it low-carb. They're great potato dupes.

This wa the most delicious soup I have ever had. I put more oregano seasoning than asked and garlic. I also added baby spinach but the kale was my favourite! I also cooked in my crock pot on high for 4 hours and waited last 20mins to put the cream in. Highly recommend this recipe.
