- 1 lb (450g) cooked shredded or chopped chicken breast (or rotisserie chicken)
- 4 cups (1l) low-sodium chicken broth, or vegetable broth
- 2 teaspoons olive oil
- 1/2 cup chopped onion
- 1 cup diced carrots
- 1/2 cup diced celery
- 2 garlic cloves, minced
- 1 1/2 cups shredded mild cheddar cheese
- 1 cup cream cheese, softened
- 1/2 cup heavy cream
- 1/2 teaspoon kosher salt and fresh black pepper
- 2 cups uncooked ditalini pasta (or any other small pasta)
- 2 cups chopped spinach
- 1/2 cup parmesan cheese for garnish, optional

Directions
1. To make the creamy chicken pasta soup: In a large dutch oven, add the carrots, celery, onion, garlic and saute in olive oil until tender and fragrant, about 5 minutes. Add cooked chicken and continue cooking for 3 minutes, stirring regularly.
2. Add the broth, heavy cream, and cream cheese. Cover and bring to a boil, then cook for 15 minutes.
3. Lower the heat, then add pasta and cheddar and simmer until pasta is cooked to your liking. Add spinach to the chicken pasta soup toward the end, and stir until wilted.
4. Adjust seasoning to taste with salt and black pepper. Serve the creamy chicken pasta soup into bowls and top with extra parmesan cheese if desired. Enjoy!
Note: If you like a thinner chicken pasta soup, you can cook pasta on the side and add to the soup at the end and reheat before serving.

Excellent flavor! I agree that the original recipe comes out too thick. I added mushrooms because I'm a fungus freak. And a little extra garlic for flavor. I will definitely make again adding more broth. Should've read the comments before making, but still very much edible :)

Delicious recipe for a cool December day! Serving it with a thick slice of crusty artisan bread. I doubled the broth to 8 cups and it's still super thick- looks more like creamy mac & cheese. Next time I'll try using 1 cup of pasta instead of 2.

This soup was pretty good. I had to add 7 cups of broth to make it more like soup, like others have said, or else it was way too thick. I didn't have celery so I added extra carrots. I put a 1/2 cup parmesan in the soup because I only had a cup of cheese on hand. I was also out of garlic cloves so I had to use garlic powder. It still came out tasty!

Great soup! Very visually appealing! Great taste! Once I souped it up! We are Cajun and require a pop of flavor in every bite. I found it to be a bit bland after following the directions. So I added garlic and onion powder, plus some Tony Chachere’s. I also addded some chicken soup seasoning and salt and pepper. I was trying this soup out to see if I wanted to make it for Christmas. And yes, I think it will do just fine as a side dish for my Cajun Christmas dinner!

Had really good flavor. But 4 cups of broth definitely not used in pictures for recipe. I would strongly recommend 6 cups of broth and cut the cream cheese to 5 ounces. Will make again with changes.

Loved the flavor! I used the whole box of pasta which was about 3 cups rather than 2 and I added an extra cup of broth to compensate... like someone else mentioned, it turned out like creamy pasta, not soup.
