Cheesy broccoli cauliflower soup

This hearty soup is made with nourishing vegetables and an irresistible creamy soup base with chicken broth, cream, and cheddar cheese. It’s done in 30 minutes and is perfect for a cold fall or winter night.

First, cook bacon until crispy, then set aside. Then add cauliflower and broccoli to a large pot with water and broth. Simmer for a couple of minutes, then add butter and cream. Finally, add cheese, bacon, and spices. Simmer the soup on low, stirring occasionally until the soup is ready to serve!

Tips for the cauliflower broccoli soup recipe

  • Cauliflower and broccoli don’t soak up water – they tend to render water instead. So for a thick, creamy soup, 2 cups of liquid plus the cream should be enough. But, if you like your soup more liquid, add more water and broth in equal proportions. 
  • If you like your soup silky-smooth, use an immersion blender and pulse until smooth.
  • Add crispy croutons as a deliciously crunchy garnish to the broccoli cauliflower soup.
  • To turn this broccoli cauliflower soup into a vegan soup, use vegetable broth, coconut milk or coconut cream instead of regular cream, and omit cheese and bacon. Sprinkle nutritional yeast on top.
  • Add a kick of spice by adding a good drizzle of hot sauce to the cauliflower broccoli soup – we like Sriracha and Cholula!

Directions

1. To make the broccoli cauliflower cheese soup: In a large skillet, cook bacon to desired crispiness. Drain from the fat, chop, and set aside. Mix onion powder, garlic powder, and thyme in a small bowl.

2. In a large pot or dutch oven, add water, chicken broth, cauliflower, and broccoli, with a dash of salt and ground black pepper; cover and simmer for 4 to 5 minutes.

3. After simmering for 4 or 5 minutes, add butter, and cream to the cauliflower and broccoli and stir well to combine. Then, add cheese and stir slowly until melted. Add 2/3 of the cooked bacon and season with the mixed spices and herbs. Adjust the soup’s seasoning with salt and ground black pepper, to taste. Cover and simmer the soup for another 5 to 8 minutes on low, stirring occasionally.

4. Divide the broccoli cauliflower cheese soup into bowls. Top the soup with remaining crispy bacon and more cheese if you like. Enjoy! ❤️

What to do with the broccoli cauliflower soup leftovers?

You can keep the broccoli cauliflower soup leftovers in an airtight container for up to 3 days in your refrigerator. Reheat on the stovetop with a few tablespoons of water to loosen the soup. To freeze the cheesy broccoli cauliflower soup, transfer the chilled soup to an airtight freezer-safe container. You can keep it in the freezer for 3 months. Thaw the soup overnight in your refrigerator before reheating.

    Delicious! I changed it up by using a full packages of frozen cauliflower and chopped broccoli, and a cup of chopped leek. Cooked that a little, then added 1 lb of diced ham, 1 pint chicken stock, 1 cup heavy cream, and 1 cup water. Brought that all to a low boil and let it simmer a little before I added the shredded cheddar. Yummy!

    AWESOME recipe. The seasonings were perfect in this, but I used 1/2 a cup of fresh onions because I didn’t have onion powder. I’ve never combined broccoli and cauliflower before and it’s magical. I cooked my vegetables longer than the instructions stated. I didn’t have any chicken broth and so I used a littke chicken base and added more water. I also added about six TBL of butter instead of two. Cauliflower and butter go together. Lol Used Dairy Pure heavy whipping cream which is the best IMHO. This tasted sooooo good, everyone loved it.     My very favorite soup so far. I started with homemade chicken bone broth. I increased the broth to 3 cups. I didn’t use water. I increased seasonings to 1/2 tsp from 1/4 tsp. It turned out absolutely delicious.

    This was really good! My son kept asking for it again and again and suggested I "publish my recipe" on the web to share with others, LOL. This reheated really well as left overs too. The only changes I made were I added a little bit of sautéed onion and I didn't have thyme. But as my instacart food delivery decided Herb de Provance was a suitable replacement for the thyme I ordered I decided to use that instead and it turned out great! I am making it again this week.

    Thank you for this delicious recipe. But, like a dummy, I made adjustments according to the reviews. I doubled the water and broth. Then it was too soupy and I had to add nearly 1/2 C flour to thicken it. Well, that defeats the purpose. I will make again and let the veggies do the thickening in a healthy way.

    I also found this was not enough liquid for veggies so I had to double all Ingredients (minus heavy cream because I didn’t have more than 1 cup but I added 2 tablespoons of flour instead to make thinker). Flavor came out great!

    made this vegan, and wanted to add a note for other vegans! i used almond milk in place of cream, earth balance for butter, miyokos vegan cheddar shreds, and soy bacon bits, and 10/10 highly recommend!! i’ve made this twice this week and my non vegan boyfriend LOVED it, and said he never would have guessed it was vegan :)

    Just made this and it was AMAZING!! Hubby wanted it for supper after seeing cauliflower soup on my 2 year olds favorite cartoon, Trash Truck! It was super simple! I did change it up a tab bit for our liking. Instead of 5 strips of bacon, I used 1 12oz pack of bacon and I also used 2 cups of cheese instead of 1. Added a little more of each seasoning as we are from Louisiana and "eyeball" our seasonings. Sprinkled a little bit of hot jalapeno and habanero jack cheese and green onions on top. My baby boy ate A LOT of it too!! Will definitely make more and freeze! This is our new favorite! Thank you for the recipe!!!!!!

    I added double the chicken broth and water as well as additional cheese. There still was not quite enough liquid. I would say 2 cups of water and broth would help. I also used 2% milk as that was what was on hand. It turned out great, nice flavor. I liked the bacon to add an extra layer of flavor.

    I found there was not near enough liquid for the amount of vegetables. Not sure what I did wrong. I added an extra cup of chicken broth. Also used my immersion blender to help mix things up. Sorry, not my favorite recipe.

    I made this using broccoli, big cauliflower, chicken stock pots, Asda garlic salt, onion granules, tyme spice jars, tub of elmlea, mature cheddar, lurpak, a little salt & pepper. Absolutely delicious. Best soup I’ve ever made, Jacqui.
