Cheesy Broccoli Fritters – This recipe for light, cheesy broccoli fritters takes just 30 minutes or less. It’s super easy to make for a side or a lunch, and you can adapt for a low carb or Keto diet by switching all-purpose flour to coconut and almond flour. Both healthy and delicious, these broccoli patties make the perfect addition to your meal plannings. Enjoy!

Ingredients list for the Cheesy Broccoli Fritters

  • 1 lb. (450g) steamed broccoli florets
  • 2 jumbo eggs
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup shredded mozzarella
  • 4 tablespoons all-purpose flour (or 2 tablespoons coconut flour + 2 tablespoons almond flour, for low carb and keto)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Pinch crushed red pepper flakes (optional)
  • 2 teaspoons freshly chopped green onion
  • Warmed marinara sauce, for serving
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Directions

1. Steam or boil broccoli florets, drain and transfer to a cutting board. Using a large, sharp knife, cut into very small pieces.

2. In a medium-sized bowl, combine the chopped steamed broccoli, eggs, Parmesan, mozzarella, flour, and garlic. Season to taste with salt and pepper. Mash and stir until well combined.

3. Place a cast iron or non-stick skillet over medium heat. Add the oil and swirl to coat the pan. Scoop out 2 to 3 tablespoon mounds of the broccoli mixture into the pan, flattening the mounds slightly with a spatula and spacing them about one inch apart.

4. Cook the broccoli fritters for 2 to 3 minutes, flip and cook on the other side for an additional 1 to 2 minutes until they’re golden brown and cooked through. Serve warm with marinara sauce, or yogurt, or sour cream. Enjoy!
