How to make fried rice

This vegetable fried rice recipe starts with onion, carrots, garlic, bell peppers, and broccoli. Everything is stir-fried until tender, and then we scramble the eggs straight in the pan. Stir cold cooked rice goes into the mix, along with corn, edamame, soy sauce, and sesame oil for seasoning. Stir fry everything together until slightly browned and crisp – dinner is ready!

Directions

1. To make the vegetable fried rice: In a wok or deep skillet, heat up the oil over high heat and cook carrots, onions, and garlic until onions are translucent. In the meantime, beat the eggs in a bowl.

2. Add bell peppers and broccoli florets and cook for an additional 3 minutes. Push all of the cooked vegetables to the side of the pan.

3.  Pour pour the beaten eggs into the cleared half of the pan. Scramble the eggs and combine them with the rest of the veggies.

4. Add edamame (or peas), corn, rice, soy sauce, sesame oil, and pepper. Mix well and let the rice cook until slightly crispy.

5. Sprinkle the veggie fried rice with chopped scallions or cilantro. Serve immediately – Enjoy!

Tips for the fried rice recipe

  • Be sure to cut your veggies into uniformly sized pieces so that they’ll cook at the same speed.
  • Make sure to use cold rice. Warm rice, just out of the rice cooker won’t fry well and will form clumps. Leftover refrigerated rice is perfect for this fried rice recipe.
  • Use high heat and keep an eye on the pan. This will help fry and brown the rice and veggies to crispy perfection. You want fried rice, not steamed rice!
  • Adjust the amount of sesame oil and soy sauce if you feel you need a kick of flavor at the end.
  • Omit the egg to make the fried rice 100% vegan.
  • Try using half butter, half oil instead of oil only. It tastes wonderful and the rice is perfectly fried every time.
