Directions
1. Combine all the ingredients except spinach and bacon, in a large Dutch oven.
2. Bring to a boil. Turn down heat to medium-low and simmer 25 – 30 minutes, or until rice is cooked.
3. Once cooked, stir in spinach and give a stir to the soup, until smooth. Top the crack chicken soup with crumbled bacon and garnish with fresh chopped parsley. Enjoy!
Note: The ranch seasoning is already pretty salty, make sure to use low-sodium chicken broth.

Made it with turkey since that’s what I had in the freezer. Sautéed some diced onion and minced garlic before putting all the ingredients in. I had a hard time finding wild rice at the store, found wild rice, rice-r-oni. Used two boxes saved the flavor packet for something else. It worked out great. I didn’t add the spinach, kinda wish I had but it all turned out pretty great. Broth tastes awesome . After a while it thickened up which made it even better. I was just too hungry to wait. Lol

I loved this recipe, and more importantly, it was approved by my 4 year old and 15-month old, picky husband, AND my mother-in-law! My kids have been a little under the weather the past week, so I went looking for a hearty chicken soup recipe, and this one was a hit! Will definitely make this again!
