How to prepare Brussels sprouts for cooking
Trim the small base at the root of the Brussels sprout. Remove any outer leaves that appear to be turning yellow or browning. Slice the Brussels sprouts in half or quarter. If they are very small, you can leave them whole, if you like. When roasting, you want to make sure the vegetables are approximately the same size in order to guarantee even cooking. One good trick when roasting is to lay the Brussels sprouts cut side down on the baking sheet so they all get a nice golden sear!
