Directions

1. To make the Sausage and Vegetable Skillet: Heat a large skillet over medium heat. Add smoked sausage and cook for about 5 minutes until sausage is golden brown. Remove to a plate and set aside

2. In the same skillet, stir fry the carrots (add a little olive oil if needed) for 4 minutes, then add shallot, garlic, spring onions, and green peas. Season with Italian and Cajun seasoning and cook on medium until vegetables are crisp-tender.

3. Deglaze the vegetables with chicken stock, add the smoked sausage to the skillet, and combine. Garnish with red chili pepper flakes and fresh parsley, and serve the smoked sausage and vegetables. Enjoy! ❤️

Tips for the sausage veggie recipe

Here are a few tips to make this sausage and vegetable recipe even better:

  • Do not overcook the vegetables so they will stay crisp-tender and retain their nutrients and flavor. Cooking carrots a bit longer ensures everything is cooked evenly.
  • Swap vegetables: Mix it up and use your favorite vegetables instead. Some great options include bell peppers, zucchini, broccoli, baby corn, and (parboiled) potatoes.
  • Make it ahead of time: Save even more time on your busy weeknights by prepping some of the ingredients. Slice the sausage and chop the vegetables ahead of time and store them in separate containers in your fridge.
  • Go easy on salt: sausage is already salty. Make sure you use low-sodium broth. Too much salt and you’ll lose all of these delicate flavors!

How to keep sausage and veggie leftovers

To keep and reheat leftovers of this one-pan sausage and veggies recipe, let the dish cool completely before storing it in an airtight container and placing it in the fridge. Keep in the fridge for up to 3 days. To reheat, heat in the microwave or a skillet on the stovetop until heated through. You may want to add a splash of water or chicken broth to loosen the sauce if it’s too dry.
