Directions

1. To prepare your crockpot chicken thighs recipe: heat oil or butter in a medium saucepan over medium heat. Add garlic and saute for about a minute, until fragrant.

2. Add the cream and chicken broth. Bring to a gentle simmer, then set heat to low and simmer for about 10 minutes. The sauce should thicken enough to coat the back of a spoon.

3. Meanwhile, place the chicken thighs at the bottom of your CrockPot. Season chicken thighs lightly with Italian seasoning, crushed red chili pepper flakes, sea salt, and black pepper. Top chicken thighs with sun-dried tomatoes.

4. When the cream sauce is ready, lower the heat and whisk in the Parmesan cheese, little by little until smooth. Adjust seasoning for the cream sauce if needed.

5. Pour the cream sauce evenly over the chicken thighs in the CrockPot. Try to get as much sauce as possible on top of the chicken thighs and less on the bottom.

6. Cook your crockpot Tuscan Garlic Chicken thighs for 3-4 hours on HIGH or 6-8 hours on LOW. When cooking time is over, remove gently the chicken thighs from the crockpot and set it aside.

7. Turn the crockpot on HIGH if it isn’t already. Add the chopped spinach to the crockpot and stir for a few minutes, until the spinach wilts.

8. Return the chicken to the slow cooker, and spoon the liquid, spinach, and sun-dried tomatoes on top, or just pour them over the Tuscan chicken when serving. Serve your CrockPot Tuscan Chicken thighs over zucchini noodles or cauliflower rice, or rice, couscous, or pasta for non-Keto. This crockpot chicken thighs recipe is Keto and low-carb diet-friendly. Enjoy!

Cooking tips for the Tuscan crock-pot chicken thighs recipe

This crockpot chicken thighs recipe is an easy “dump and go” slow cooker recipe that is so good you’ll be 100% addicted to it! Here are a few tips and tweaks to make the most of this recipe:

  • Cooking garlic, cream, broth, and parmesan in the pan ensure the cream is well infused with garlic and stays smooth. If you don’t want to prepare the cream sauce on the side, you can put everything into the Crock-pot with chicken thighs and give it a quick stir before cooking.
  • We recommend using skinless chicken thighs as they will render less fat. You can use chicken breasts instead, but we found out the meat comes out a little less flavorful than chicken thighs for this slow-cooker chicken thighs recipe.
  • For a deeper flavor, you can sear the chicken thighs in a hot skillet on only one side, then transfer to the pre-heated slow-cooker and follow with the recipe.

How and how long to keep the crockpot chicken thighs leftovers?

This Tuscan crockpot chicken recipe will keep for 3 days in an airtight container in your refrigerator. You can also freeze for up to 3 months. Let thaw in the fridge and reheat gently in a pan, covered; or in the microwave, with a dash of water to loosen the sauce.

Can we use frozen chicken thighs in the crockpot?

Yes, you will need to slow-cook on the higher end of the cooking time if you’re using frozen chicken thighs or breasts.

I always heat my slowcooker and ingredients so i fried the chicken before adding it to my heated slowcooker. I also used more cream and stock than the recipe. At the end i took the chicken out and added cooked pasta to absorb the liquid for 30 minutes before serving. My family loved it and I will be making it again next week.

Love this dish! I’ve made it several times and the whole family devours it. I use boneless chicken thighs and serve over cauliflower rice or wild rice. 3 - 3.5 hours on high in the crockpot and the chicken is tender and so flavorful.

Just put this into the crockpot. Cream sauce was really thick after slowly whisking in the parm. So thick that I couldn't whisk and went with a rubber spatula. Added more chicken broth and a little more plain milk but was still somewhat thick. Ended up spooning it over the chicken. Advice? Advice for next time from anyone. Do yall think it will thin out?

Absolutely did not like. Lacked flavor!

I love flavor of this, but how do I keep the milk from curdling in crockpot? Doesn’t look too appetizing.

Seriously, this recipe is amazing. I used boneless chicken thighs, but followed the recipe otherwise, and it turned out GREAT!! I am a little skeptical of crock pot recipes as I’ve found some duds, but this one is sooo good!!! Thank you!

My niece served this to me for dinner one evening over rice. It was delicious! I have made it several times since then, but I prefer it over noodles, especially spätzle, since I live in Germany, but any noodle or pasta would be good. I use boneless, skinless thighs, and I only use 1 clove of garlic, if any. Frozen leaf spinach also works well. I just put everything in the crockpot, no pre-cooking the sauce. It is super easy and tastes delicious!

I made this the other night for dinner. There were no leftovers and everyone went back for seconds. I served the chicken with some oven baked green beans and it was perfect.

This recipe is fabulous! I started it to late in the day to use my crock pot and ended up cooking it in the stove top. I used chicken breast and, concerned about time, I used my tenderizer on them. I then seasoned then with salt and pepper and the itilian seasoning and cooked them in garlic infused (I removed the garlic and set aside to be added back in with the mushrooms) olive oil and cooked until done. I removed the chicken and added about a cup of Mushrooms and the sauteed garlic and cooked scraping the bottom of the pan for approximately 3 minutes. I next added the stock, heavy cream and fresh parmesan cheese and simmered. Next, I added the spinach and sun dried tomatoes and continued cooking long enough for the spinach to wilt. Finally, I added the chicken back to the pan and topped with additional fresh parmesan cheese. The whole dish took less than an hour to prepare and is now a favorite in this home!!! Thank you so much for the share!

Amazing! My husband raved over it. We served it over rotini. The flavors meld together so beautifully. There is a little kick from the chili flakes! We highly recommend. Would also be delicious and easy for guests.

Love this recipe! Made cashew cream to replace heavy cream (1 cup cashews heated in boiling water for one minute, drained and blended with 1 cup water in blender). Super yummy and healthy.

I've made this twice and we loved it both times - latest was cooked for our Christmas dinner! I used whole milk instead of cream, and it was still creamy and delicious!

I cut the cream with milk - half whipping cream half 1% and it was delicious. Maybe a bit runnier but still yummy! Staple for sure.

This meal was delicious my husband and I both loved it. The chicken was so tender. I used too much cream so I added some cornstarch to thicken up the sauce. Thank you for this awesome recipe it has just become one of my favorites.
