Directions
1. To prepare your crockpot chicken thighs recipe: heat oil or butter in a medium saucepan over medium heat. Add garlic and saute for about a minute, until fragrant.

7. Turn the crockpot on HIGH if it isn’t already. Add the chopped spinach to the crockpot and stir for a few minutes, until the spinach wilts.
8. Return the chicken to the slow cooker, and spoon the liquid, spinach, and sun-dried tomatoes on top, or just pour them over the Tuscan chicken when serving. Absolutely delicious! I basically made no changes except for slow cooking it in my Instant Precision Dutch Oven. I slow cooked it for 3.75 hours. (The IPDO only has one slow cook setting and it corresponds most closely to high on slow cookers.) I did use water and Better Than Bouillon instead of chicken broth and had a little more sun-dried tomato (finished the package). The chicken was falling apart and moist. I made the sauce as directed but I think next time I'll sear the chicken first and make the sauce right in the Dutch Oven. I served it over white rice. You need something to soak up the wonderful sauce!

Oh Myyyyyy Myyyyyy! This chicken dish is beyond delicious! The only thing I did different was to lightly sear the chicken thighs, used the entire jar of sun dried tomatoes and add 1/4 cup white wine to the sauce. I also made the sauce recipe 1 1/2 times. It only took 4 hours on low to cook. I used 8 skinless, bone-in chicken thighs. Leftovers were awesome as well the next day! I served it over Garlic Parmesan Rice. It was all to die for!

I wish I could give this way more stars. All 7 of us including kids and in laws LOVED this beyond words. It is so rich and flavorful, unreal. I loved this so much, my SO called it eye closing delicious. I did a few things different for no other than I confused it with a different recipe. 🤪 I added a diced onion and I used half & half as I had no cream. I also added a 1/4 c of white wine and I added a 7.5 jar of sun dried tomatoes. I put it over garlic mashed potatoes. The flavor of this was wonderful but I’m thinking I need to add more broth or cook less time? I used chicken breast but followed recipe to a T. I cooked on high for 3.5 hours and there was almost no sauce. It was VERY thick and very brown…not at all like the picture. I enjoyed the flavor so will try again maybe on low this time. I always heat my slowcooker and ingredients so i fried the chicken before adding it to my heated slowcooker. I also used more cream and stock than the recipe. At the end i took the chicken out and added cooked pasta to absorb the liquid for 30 minutes before serving. My family loved it and I will be making it again next week.

Just put this into the crockpot. Cream sauce was really thick after slowly whisking in the parm. So thick that I couldn't whisk and went with a rubber spatula. Added more chicken broth and a little more plain milk but was still somewhat thick. Ended up spooning it over the chicken. Advice? Advice for next time from anyone. Do yall think it will thin out?

My niece served this to me for dinner one evening over rice. It was delicious! I have made it several times since then, but I prefer it over noodles, especially spätzle, since I live in Germany, but any noodle or pasta would be good. I use boneless, skinless thighs, and I only use 1 clove of garlic, if any. Frozen leaf spinach also works well. I just put everything in the crockpot, no pre-cooking the sauce. It is super easy and tastes delicious!

This recipe is fabulous! I started it to late in the day to use my crock pot and ended up cooking it in the stove top. I used chicken breast and, concerned about time, I used my tenderizer on them. I then seasoned then with salt and pepper and the itilian seasoning and cooked them in garlic infused (I removed the garlic and set aside to be added back in with the mushrooms) olive oil and cooked until done. I removed the chicken and added about a cup of Mushrooms and the sauteed garlic and cooked scraping the bottom of the pan for approximately 3 minutes. I next added the stock, heavy cream and fresh parmesan cheese and simmered. Next, I added the spinach and sun dried tomatoes and continued cooking long enough for the spinach to wilt. Finally, I added the chicken back to the pan and topped with additional fresh parmesan cheese. The whole dish took less than an hour to prepare and is now a favorite in this home!!!
