Directions

1. To make the creamy sausage soup with vegetable: In a 6-qt. stockpot or Dutch oven, heat oil over medium-high heat. Add sliced sausage, onion, and celery; cook for 6-8 minutes or until sausage is no longer pink and vegetables are tender. Add minced garlic, then cook 1 minute longer.

2. Add broth, black pepper, and Cajun seasoning and bring to a simmer. Stir in kale, spinach, and the rest of the green vegetables. Reduce the heat; simmer, covered, 10-12 minutes or until veggies are tender.

3. Add the cream and give a good stir. Reheat for a minute, then adjust seasoning if necessary.

4. Divide the creamy sausage soup into bowls and garnish with grated parmesan and chili pepper flakes, if you like. Enjoy warm! 🍲

Tips for the Creamy Sausage Soup With Green Vegetable Recipe

  • Go easy on adjusting salt as the sausage and vegetable broth are already pretty salty.
  • Change up your protein if you prefer turkey or chicken sausage, or even ground beef if you do not have sausage at hand.
  • Make this green sausage soup dairy-free by just skipping cream at the end. For a “creamy” feel, you can add small diced potatoes to the mix.

How and how long to store the sausage soup leftovers?

This sausage soup with veggies will keep for 3 days in the refrigerator in an airtight container. You can even freeze it! Reheat gently on the stove, adding a few tablespoons of water to loosen the soup.

How to make your own Cajun Spice Blend

The Cajun seasoning mix is very easy to make by yourself and will keep for months in an air-tight container. Use these ingredients, but feel free to adjust the amounts to your liking:

  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon celery seed
  • 1 teaspoon dried thyme
  • 2 teaspoons dried oregano
  • 1 tablespoon garlic powder
  • 2 tablespoon sweet paprika

This was really great! It was perfect for an iced in 21° day. It's probably my 2nd favorite soup (behind cheddar beer soup). I will be making this again and again!

I LOVED this recipe. I swapped out the heavy cream with 5 oz of coconut cream and 3 oz of almond milk. It wasn’t as creamy as the photo, but it was SO delicious. I poured it over brown rice & quinoa to bulk it up. My daughter ate THREE BOWLS and we had it for leftovers the next night as well!!!
