1. To make the creamy Instant Pot Sausage Kale Potato Soup Recipe: Set a 6-qt Instant Pot to saute mode. Add diced sausage to the insert of the Instant Pot and cook until sausage is lightly browned–about 3-5 minutes. Drain excess fat if necessary.

2. Add garlic, onion, and oregano to the Instant Pot with the sausage meat. Cook, stirring constantly until onion have become translucent, about 2-3 minutes.

3. Stir in chicken broth and potatoes; season with pepper, to taste.

4. Select the manual setting on your Instant Pot; adjust the pressure to high, and set the timer for 5 minutes. When finished cooking the sausage soup, do a quick-release.

5. Select saute mode and stir in kale to the soup until wilted, about 1-2 minutes. Stir in heavy cream until heated through, about 1 minute; then adjust seasoning of the sausage soup with salt and pepper, to taste. Serve the creamy sausage kale potato soup immediately with fresh grated Parmesan and parsley. Enjoy!

Tips for the Instant Pot Creamy Sausage Kale Potato Soup Recipe

This Instant Pot soup is super easy and versatile. Feel free to add more spices if you like a kick of heat! Here are a few tips to make even better:

  • If you substitute fresh diced potatoes for the frozen, you will probably need to add to the cooking time. The dish is done once your potatoes and onions are cooked.
  • Make sure to use a large Instant Pot, if too small, you might end up with the dreaded “burn” notice.

How and how long to keep the Instant Pot soup leftovers?

This Instant Pot soup with sausage, kale, and potatoes keeps for up to 2 days in the refrigerator. Reheat gently in the Instant Pot or the microwave, adding a few drops of water to loosen the soup. Keep in mind that potatoes might become mushier the more you reheat the soup, though.

Can we freeze this Instant Pot sausage soup?

Yes, you can always freeze the Instant Pot sausage soup for up to 6 weeks in a freezer-safe container, but we don’t recommend it because potatoes will not hold well after thawing. They will ultimately turn mushy and thicken the soup.

Can we make the creamy sausage soup in the slow cooker?

Yes, you can. Follow these tips to convert this Instant Pot soup recipe for the slow cooker:

  • Sauté the sausage, onion, and garlic before adding to the slow cooker insert. It helps to bring out the flavors in this soup. Make sure to season vegetables as you brown them for the best flavor.
  • Add the cream and kale at the end of cooking, and give a good stir to avoid separating.

I made this tonight for dinner and it was a smash hit! I added sliced carrots to it, thyme, rosemary, red pepper flakes, dry sherry, and used Italian mild sausage because I had some I needed to use up, and it was honestly the best soup I've ever eaten in my life.

This is a favorite of mine to make! I love how quick and easy it is, with ingredients mostly in my pantry and fridge already. I agree with the comment about how much kale is one bunch. The first time I made it I cut up way more than I put in. I would recommend about one and a half stems. I do love this recipe and highly recommend it!

I didn't have kielbasa but so far the soup smells and tastes fantastic with Aldi mild italian bulk sausage. I thing maybe it would be good to add a loose approximation of how much kale. I've stemmed mine and torn it into bite sized pieces and I have about 8 cups. Seems a bit much so I'm thinking half would be enough? Apparently bunches of kale vary quite a bit as I know I've gotten less from a bunch in the past.
