Directions

1. To make the crockpot beef stew: Add the diced tomato, diced potatoes, sliced carrots, ground beef, diced onions, whole garlic cloves, oregano, bay leaves, and seasoning to a large slow cooker.

2. Pour the beef broth over everything and stir to combine. Cover and cook on low for 6 to 7 hours, without opening the lid during cooking time. 

3. Serve the crockpot beef stew topped with parmesan and chopped parsley. Enjoy with a sliced french baguette!

  • If you have some time available, you can brown the ground beef in a skillet with salt and pepper before adding it to the slow cooker. This makes the dish deeper in flavor.
  • To give the crockpot beef stew even more complexity, consider adding red wine or dry white wine. One cup should be sufficient.

    This was delicious. I did brown the meat & onions. I also added a can of tomato soup. I served it over linguini.
