Directions

1. To make the crockpot beef stew: Add the diced tomato, diced potatoes, sliced carrots, ground beef, diced onions, whole garlic cloves, oregano, bay leaves, and seasoning to a large slow cooker.

2. Pour the beef broth over everything and stir to combine. Cover and cook on low for 6 to 7 hours, without opening the lid during cooking time. 

3. Serve the crockpot beef stew topped with parmesan and chopped parsley. Enjoy with a sliced french baguette!

Tips for the crockpot beef stew recipe

  • If you have some time available, you can brown the ground beef in a skillet with salt and pepper before adding it to the slow cooker. This makes the dish deeper in flavor.
  • To give the crockpot beef stew even more complexity, consider adding red wine or dry white wine. One cup should be sufficient.
  • If you find the sauce is too thin or you like a thick stew, you can use a cornstarch slurry (equal parts cornstarch and water) and add it in at the end. Allow the crockpot beef stew to cook about 10 minutes after adding the slurry to get rid of the starchy flavor.
