Cream cheese cookies – These are SO good, you’ve been warned! These little low carb cream cheese cookies are crisp on the outside and super tender in the inside, thanks to the cream cheese and coconut flour combo. And yes, they are low carb, keto friendly and gluten free. Enjoy!

Ingredients list for the low carb Cream Cheese Cookies

  • 1/2 cup coconut flour
  • 3 heaping tablespoons cream cheese, softened
  • 1 egg
  • 1/2 cup softened butter
  • 1/2 cup sugar, erythritol, or other sugar substitutes
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

1. In a bowl, cream together the butter, cream cheese and erythritol (or your sugar substitute) using a mixer.

2. Add the vanilla extract and egg. Beat until smooth.

3. Add the coconut flour, baking powder, and salt and beat until well combined. The mixture should be a bit sticky.

4. Form small balls with a cookie scoop and arrange a baking sheet lined with parchment paper. Cover with another sheet of parchment paper and place in the fridge to firm up for 15 minutes. In the meantime, preheat your oven to 350ºF (180ºC).

5. Remove the dough from the fridge and bake the cream cheese cookies for 15-25 minutes until golden. Chill on a cookie rack. Enjoy!

    I feel like the ratios were off. Coconut flour holds way more liquid than 1 egg. My cookies were totally crumbly.
