How To Make Chicken in the Crockpot

This crockpot chicken thighs recipe is SUPER easy to make. Place the chicken thighs in the slow cooker. Combine 1/3 cup chicken broth, lemon juice, and zest. Pour the broth over the chicken. Season the chicken thighs with Italian seasoning, onion powder, garlic powder, paprika, crushed red chili pepper flakes, salt, and pepper. Top chicken with fresh minced garlic and diced butter. Cook on High for 3-4 hours.

Once the chicken thighs are cooked, serve the chicken over white rice, pasta, cauliflower rice, mashed potatoes, zucchini noodles, or egg noodles.

    I just put in crockpot but know it has all the flavors I Love! I will let you know how it turns out this evening. I may have made a big OOPS because I added a can of chickpeas and half a head of raw cauliflower to the bottom, then nestled in the chicken. I may have “misread” a reviewers comment about doing this.     I needed dinner and it needed to be quicker than a crock pot. I used an electric skillet. I used the butter in the recipe to brown the chicken with the seasoning. I did not use cayenne or red pepper. I only used smoked paprika. Once chicken was browned I poured sauce over it and let simmer. I tasted sauce and decided to add more lemon juice with a little flour to make sauce thicker. It was delicious.

    This is a great and easy recipe. The lemon zest is a necessity. I usually doll up any recipe I find but nothing more to add here. I skim the oil off the top a few times after about 3 hours. Today is the second time I'm making this. the Only change is to reduce the cook time. My cooker seems to cook a bit hot while on low and with such a small about of meat, it cooks in 4 or 4.5 hours at low.

    I agree with the lady who thought the recipe was too lemony. If I make it again I will cut way back on the lemon. However, this time I added a 1/4 tsp of baking soda in my daughters advice and it cut the lemony taste way back and now I enjoyed it more. Served over rice and thickened the broth.

    Made this for dinner tonight--it was DELICIOUS!! Family loved it very much! I didn't have chicken broth, so I used a small bottle of club soda and added juice and zest of lime in addition to the lemon; nice flavors. I mixed the spices into the liquid mixture and poured everything over top of chicken. I cooked it on low for 7 hours because the boneless, skinless thighs were still frozen.     I am making this recipe for the second time in two weeks it was so good!     Not sure how people had this recipe turn out bland! I only put a tiny bit of the cayenne pepper (because we have a low tolerance for spice) but next time I’m gonna try the full amount for more heat. So easy, so yummy. Boiled the liquid with a cornstarch slurry for a few minutes to thicken up the sauce. Definitely will be making again!

    This chicken is so delicious. My family asks me to make it all the time. The only thing I do different than what the recipe calls for is that I use boneless skinless chicken breasts because I’m not a big fan of thighs. I do not think this change makes any difference. I also always start with frozen chicken without any issue. I serve it with white or brown rice and broccoli seems to just be a natural fit. It’s very easy to make. I highly recommend this one.     This was delicious. I used 8 thighs and the following spice rub: ½ tsp Salt, ¼ tsp Pepper, 1 tsp each Garlic Powder and Onion Powder, ½ tsp Crushed Red Pepper Flakes, ½ tsp Paprika; mixed together and rubbed all over the thighs before placing in my pressure cooker (which has a slow cook mode), then sprinkled what was left over across the top of the chicken so it'd all be in there. I went with 1 Tbsp Minced Garlic. In place of Italian Seasoning, I used ½ tsp each Basil, Marjoram, Oregano, and Parsley (all dried); I have found that we typically prefer more robust herb presence in recipes, so I doubled the total amount of that one. I used a plant-based butter (in the ½ stick / 4 Tbsp amount). Zest of half a lemon and juice of the whole thing, plus some broth, and we were good to go. We're definitely going to keep this one in rotation. I served it tonight with roasted curry cauliflower and a zucchini tomato casserole. The buttery sauce was so delicious, too, that we've saved it (with all the spice and herb goodness left in there) and plan to expand it into a soup. re: cooking rice with the chicken - I saw this asked and didn't see it answered, so figured I'd share my thoughts on this one. Rice doesn't need 4 hours to cook, and would probably end up super-mushy if put in at the beginning of this cook time. To have rice cooked in the juices, first cook the chicken and either shred it or remove it and set aside. Then, stir uncooked rice into the juices and cover. Cook the rice for 8-10 minutes, or until done. It takes about 12 minutes when I add it to a crock jambalaya that I cook on LOW, so I'm assuming it would be a little less when the crock is on HIGH.

    Loved this recipe! I had frozen skin-on chicken thighs on hand so found this recipe to use them up! Turned out super tender and falling off the bone–YUM!     This chicken was great. I am making it again this week! I put it in salad or just eat it up with cauliflower rice. YUM! I omitted the red pepper flakes and used fresh ginger instead and instead of Italian seasoning I used a Mediterranean Spiced Sea salt because it's my favorite.     This is weirdly blah. Considering the ingredients I hoped for wow. I even added less butter, more lemon zest, more Italian seasoning, and a touch more crushed red pepper. I tried thickening up the sauce after the chicken was cooked and it was too fatty to work. I toasted some cous cous, put the chicken on top with some fresh green beans and put some sauce on top.     Quick, easy weeknight meal that family ate without complaint. Thew some water in a pot, added a chicken bouillon cube, frozen skinless thighs, dumped ingredients over it, less butter needed, adjust lemon to taste, no additional salt needed as bouillon cube and butter was adequate. Since I had too much water, I let summer with the top partially off and it reduced to a delicious broth that I poured over a bed of rice with frozen mixed veggies in. Took all of 10 min to get this (almost) one pot meal going and it can be ready as fast you want it to be. Cooked on stove top and it was done in ~20 min, but I turned it low and let it reduce for the "gravy"..Cant get much easier. Thanks and its a keeper!

    Just put this in the crockpot and can't wait. I made some modifications: seared the chicken in leftover bacon fat, sliced half a white onion and sauteed in the chicken/bacon juices, added 1/3 cup white wine to the lemon juice and chicken broth, deglazed the pan after the onions cooked, poured it all into the crockpot on top of 2 bay leaves, 1 sprig of rosemary and 3 sprigs of thyme. I didn't have paprika, so omitted it. Will let you know how it turns out!!

    I made this last night, exactly how the recipe said, and boy was it amazing. My boyfriend couldn’t stop talking about it. We loved the flavor with the little kick! I served it with yellow rice, putting some of the sauce from the crockpot over the rice! It was fantastic! Thank you!

    Made it for the third time today, little tweaks and changes each time but this is a fantastic recipe and the flavor is wonderful. More lemon less butter has been my main change. Tonight having it with green beans cooked in pot with the chicken and brown rice. Thanks a million

    Made this recipe and loved it! Didn't have Italian seasoning so didn't add that. For some reason there's a bitter after taste to it. Any suggestions?

    I Loved it! So easy and delicious. I made a few alterations though, I added about 1/3 cup of white white and I placed 2 cleaned halves of a spaghetti squash on top of the chicken and let it cook the whole time with them. Then I scraped out the squash and spooned the sauce over it and then added the chicken. Scrumptious. Thank you!

    I made this on top of the stove with skin on bone in thighs. I also added spinach to avoid having to use another pan. I will make it again. We loved it.

    This was fantastic! Made it with boneless skinless thighs! Meat was so yummy! Just fell apart! Served with cauliflower rice and the juices over all! So good!

    The recipe is super easy and most cooks will have these items around the pantry. That bring said, I thought this dish was really boring. It's easy but boring. Oh well, on to the next one. Happy cooking y'all.

    This was seriously SO good! I added more lemon zest and lemon juice (cause we love lemon) and browned the thighs before adding to crock pot. The red pepper flakes gave it a nice warm flavour. Big hit!! Thank you!

    This was delicious! I cooked this in my cast iron skillet instead of crock pot and used breat meat sliced. Added all the seasoning with the raw chicken and seared in skillet. Added an onion, didn't have onion powder and garlic. Then the liquids and simmered until done. Probably used 1 cup of chick broth. Very tasty,will make again.

    Oh my. This was so good! I made it tonight for the first time and I say first time because I will definitely make it again. The only thing I did different was after mixing the herbs together, I put them directly on the chicken thighs and let them sit overnight. My house smelled sooo good all day while it was cooking.     This recipe was sooooo yummy! I served it over cauliflower rice and the juices that come from it are so tasty, I used chicken thighs with skin on and bone in and the cauliflower rice was stir fry from costco but I ate like 4 out of the 7 or 8 peices that I made. I'm making it tomorrow and I'm so excited
