I made this for dinner last night…it’s a keeper, husband loved it. I wilted the kale in the pan that I cooked the sausage in before I added it to the soup. I don’t think it would have wilted like I would have liked if I added it to the pot…next time I think I might cook it down with the heavy cream at the end bc it didn’t really mix very well with these instructions. We topped with a little pot of parmesan and the left overs were gone the next day!

This was delicious, but it seems like the instructions are misleading. I really feel like you've got to pressure cook the kale to break it down a bit in the soup. Otherwise you end up with a kale salad with very soupy dressing LOL. We ended up putting the soup back under pressure for a few minutes after sautéing the kale and adding the heavy cream, and that turned out much better. Next time we will cook the sausage, onions and garlic on the stovetop. Bring the chicken broth to a simmer in the Instapot, add the kale to it (along with the meat) to wilt, and then pressure cook for the 5 minutes. Adding cream at the end.

This soup was so damn delicious! I did the crock pot method, cooked on high for 3 hours. Add all of the grease from braising the sausage to the crockpot for flavor, i added a diced zucchini, and added kale at the same time as cream. I added salt but I don't think I needed to to bring out the flavor. It was only 26 calories per ounce, so good it's on my regular rotation of meals now!

This was excellent. I have been a long time lover of Olive Garden’s Zuppa Tuscana soup. This is an amazing low carb option to replace it with. We use hot Italian pork sausage and replace the kale with spinach, and it turns out sooo good! I have replaced vegetable broth for chicken broth, and I thought that was a bad decision as the flavor wasn’t as good. Also, I’ve tried it with kale, but spinach seems more neutral in this soup whereas kale holds a more overpowering taste. This is absolutely delicious and a must have in any meal rotation!

This was very good! I had not used my InstantPot before so I was a little unsure on using the saute feature. So I cooked the sausage, garlic, onions and oregano on the stove top and then moved it to the InstantPot and finished it there. I wasn't sure if the InstantPot did something special (like thickened it) so that is why I finished it there, but it didn't seem to do anything it wouldn't have done in the pot. Anyway, just thought I'd share it can be done on the stovetop too.

The first few times I made this, I followed the recipe exactly…and it was amazing! My husband and I are not huge fans of sundried tomatoes, but we still very much enjoyed it. After making it probably 30 times, the only adjustments I’ve made was replacing the tomatoes with roasted red peppers, I add a can of cannellini beans (with the juice, helps to thicken the broth) and subtract one cup of the chicken broth. I’ve also added mushrooms on occasion. I hate being the person that adjusts recipes and talks about it, but here I am doing it anyway! Not 100% Keto because of the beans, but still hearty, delicious, and healthy-ish! I hope that this helps someone/gives someone ideas on how to make an amazing recipe a little spin😁

I love this soup, I make it all the time!!! I've altered the recipe to make it vegetarian using vegetable broth (better than bullion), a package of tofurkey italian sausage, and I also add 16 oz of chopped, sauted, baby bella mushrooms. Sometimes, to mix it up, I add some roasted red peppers, as well - making it this way it is a lot lighter and a lot less greasy - I'm absolutely hooked!!!

Delicious! To be truly keto (11g carbs per serving down to 5g with modifications), reduce the amount of onion, sub fresh tomato for the sun dried (super high in carbs) and fresh spinach for the kale. Plus watch the brand of sausage/meat you use - a lot of sausages have added sugar. Easy to make on stove-top, as well.

This was really good! Since my family isn’t much for hot Italian sausage I used 1 pound of mild chicken Italian sausage and then one link of hot just to add some flavor. They always like more meat in their soup anyway. Loved the kale!

Excellent. I used what I had: ground turkey, Italian seasoning, red pepper flakes, s & p, paprika and bay leave. I sautés onion, celery and garlic with the meat. Added 4 cups ckn stock, a can of diced tomatoes cook 6 min. Then I added some chopped zucchini, spinach and a bloc of fat free cream cheese and out lid back on for 8-10 minutes. Delicious.

DELICIOUS! I served this for a small dinner party and everyone wanted the recipe. Even better leftover. I used a stovetop rather than instant pot. Still easy. I also substituted the kale with spinach and broke with Keto a bit and substituted 1cup of the chicken stock with 1cup white wine. I added the wine first and let the alcohol burn off a few minutes then added the chicken stock.

The only thing I do differently is remove the sausage from pot and Then do the onions alone for 3 minutes, then oregano and then garlic for only 45 seconds before I add back the sausage and sauté them for a minute. I also added 1 1/2 cups of riced cauliflower and cooked that in the soup. I reduced the kale a bit because of the cauliflower...... Delish,

I made this soup last night for my family and it was a huge hit!! I never leave recipe reviews, but felt compelled to because this was SO good. I don't follow Keto, so I added two cans of cannellini beans since I was feeding six people, also used hot italian turkey sausage since we don't eat pork. I made 1.5x the recipe and it was true to serving size for 6 people. Tasted really good with some warm foccaccia bread (if you're not Keto).
