If you’re looking to cut carbs while enjoying a heartwarming soup for dinner, this Tuscan keto soup recipe is definitely the way to go!

Out Tuscan Keto soup is made with easy-to-find ingredients you may already have in your fridge or pantry:

  • Italian sausage: In bulk or removed from the casing. You can sub the Italian sausage with lean ground turkey or chicken.
  • Onion: Onion gives that sweet, robust flavor that makes the base of the Keto soup.
  • Garlic: Always a lot of fresh garlic! Use garlic powder, 1 or 2 teaspoons if you don’t have fresh garlic at hand.
  • Sundried tomato: Add incredible flavor to the soup. If you want to cut more carbs, use diced fresh tomatoes instead,
  • Oregano: A mild seasoning herb that brings up these wonderful Mediterranean flavors. Use Italian seasoning if you like, but keep in mind the flavor might be stronger.
  • Whipping cream: Makes the keto soup creamy and helps raise the fat content for keto dieters.
  • Chicken broth: Make sure to use low sodium chicken broth.
  • Kale: Laccinato or dinosaur kale are both fine for this soup recipe. Be careful with store-bought chopped kale, the stems can be mixed with the leaves.

LOVE THIS! I cook this in a regular pot, and it’s so good!!? Usually, I’ll one container of leftovers in the fridge, and a couple in the freezer. SO GOOD! (It won’t let me share my pic because it’s “too large.”

This soup is delicious and so easy! I used mild Italian sausage and added cauliflower and spinach instead of kale (that’s what I had). I feel this is a great soup that you could add even more veggies and other proteins too and it would turn out amazing! Thanks for sharing!

This soup was amazing. Will be one of my regular recipes now.

So good, and so filling. I did mine in my IP and followed the instructions to the tee with the only exception of adding a can of diced tomatoes in addition to the sun dried tomatoes. I’ve made this at least 3 other times and it is always a hit. My family would NEVER eat kale except in this recipe!

  • Tasha

    2023-06-17 18:43:07

I’ve made this several times. It’s delish! The only thing I suggest is that you add the kale before pressure cooking in the IP. Comes out perfect every time.

  • Andrea

    2023-04-19 19:56:11

So good!! I put it in a crockpot on low for 7 hours. At 6 1/2 hours I added the creamy with a couple teaspoons of Xanthum Gum to thicken. I added some cubed rutabaga too. This was a hit!

  • Steve

    2023-01-17 21:20:05

Added cauliflower, spinach instead of kale and zucchini. This soup tastes fabulous! Thanks for sharing!

  • Donna

    2023-01-15 15:31:26

Delicious. We made this on the stove. Cooked the kale in the chicken broth while we cooked the sausage, onion and rest of the ingredients in the frying pan. Definitely a make again recipe for us.

  • Chelsea Bush

    2022-12-29 20:34:07

Delicious! I wilted the kale for a bit before I added

  • Maya

    2022-12-28 16:09:03

This was delicious although I will probably use grape tomatoes in place of sun-dried tomatoes and use regular sausage (not hot Italian sausage) next time I make this recipe. It was too salty and spicy, but had a lot of flavors!

  • Ashley

    2022-12-06 11:10:42

I made this for dinner last night…it’s a keeper, husband loved it. I wilted the kale in the pan that I cooked the sausage in before I added it to the soup. I don’t think it would have wilted like I would have liked if I added it to the pot…next time I think I might cook it down with the heavy cream at the end bc it didn’t really mix very well with these instructions. We topped with a little pot of parmesan and the left overs were gone the next day!

  • Susan L

    2022-11-20 21:18:21

I made this tonight for dinner it was absolutely delicious!!

  • Jen

    2022-11-08 12:34:47

This was delicious, but it seems like the instructions are misleading. I really feel like you've got to pressure cook the kale to break it down a bit in the soup. Otherwise you end up with a kale salad with very soupy dressing LOL. We ended up putting the soup back under pressure for a few minutes after sautéing the kale and adding the heavy cream, and that turned out much better. Next time we will cook the sausage, onions and garlic on the stovetop. Bring the chicken broth to a simmer in the Instapot, add the kale to it (along with the meat) to wilt, and then pressure cook for the 5 minutes. Adding cream at the end.

    2022-04-28 03:34:06

This recipe was so easy and absolutely delicious. My husband usually doesn't like kale, but I added a ton of it, and he loved it. I will definitely be adding this to the rotation as it was a big hit for the entire family. I've already shared the recipe with three other people.

  • Mel

    2022-04-07 12:47:49

I've made this soup twice and it is always great and a great way to get my Hubby to eat kale. I will be making this monthly.

  • Holleigh

    2022-02-22 17:08:33

This has been one of our go-to soups for over a year now and we have it at least once a week. The best soups I've ever had and pushed out my beloved Zuppa Tuscana soup as the queen soup of my home. We make this on the stovetop and not in our InstaPot.

This soup is like hitting the JACKPOT!! Delish! So simple to make and adjustable to what diet or pantry item you have. Thanks for the alternative cooking directions. I used the slow cooker method and added mushrooms and zucchini; and changed out the kale for spinach. Thanks for sharing!

    2022-01-30 14:06:08

Have made this recipe several times in the crockpot as is and have shared with family and friends. It is so delish! Everyone has loved it! Today I am adding some sliced mushrooms for extra hardiness. This is by far my fav keto friendly soup.

  • Christy

    2022-01-25 23:27:33

Wonderful recipe! Used ingredients I had in hand: rotisserie chicken, fresh tomatoes and fresh spinach. Added some lemon juice to brighten it up and tossed in leftover chick pea pasta shells. Delicious! I'll try with sausage next time!

  • Cheryl

    2022-01-24 21:01:51

Excellent soup, I added zucchini and mushrooms to it and some hot pepper flakes. Both my husband and I enjoyed it

Yummy. First time using my instant pot and was thankful for your directions.

  • April B

    2022-01-14 18:20:32

I didn’t have an InstantPot, and just cooked it all over the stove and it was DELICIOUS! Hoped to share my photo too, but oh well! Easy for stove top! Absolutely delicious. And I don’t think I changed a thing. Didn’t measure my seasonings at all. Just did them to taste. Seriously so good!

  • Maeve

    2022-01-10 11:07:07

This soup was so damn delicious! I did the crock pot method, cooked on high for 3 hours. Add all of the grease from braising the sausage to the crockpot for flavor, i added a diced zucchini, and added kale at the same time as cream. I added salt but I don't think I needed to to bring out the flavor. It was only 26 calories per ounce, so good it's on my regular rotation of meals now!

  • Mel

    2021-12-31 13:50:13

Excellent. Store only had hot Italian sausage. This was really good, will be making this again.

  • Kathy

    2021-12-21 11:07:32

It turned out really well. I used more sausage and spinach instead of kale. I’ll definitely make it again.

  • Jessica

    2021-12-19 15:39:15

This was excellent. I have been a long time lover of Olive Garden’s Zuppa Tuscana soup. This is an amazing low carb option to replace it with. We use hot Italian pork sausage and replace the kale with spinach, and it turns out sooo good! I have replaced vegetable broth for chicken broth, and I thought that was a bad decision as the flavor wasn’t as good. Also, I’ve tried it with kale, but spinach seems more neutral in this soup whereas kale holds a more overpowering taste. This is absolutely delicious and a must have in any meal rotation!

  • Alyssa

    2021-12-09 12:44:20

This was absolutely amazing! My husband doesn't like kale / spinach or sundried tomato and had two bowls! I added spicy sausage and red pepper flakes and it was just the perfect kick. Will be adding to a favorite.

  • Sam

    2021-12-05 20:00:26

I loved this soup! I only made a couple of adjustments. Such as, adding Italian seasoning and some rosemary, and turmeric for some color. I also added great northern beans to thicken it up a bit and make it hearty. It was delicious and a hit for dinner, I’ll definitely be making it again.

  • Tucker Morgan

    2021-12-03 00:24:47

Like everyone else, I am obsessed with this soup! We rotate it into our weekly meal plan at least 1x/week! One slight modification that I HIGHLY recommend is 1tspn - 1 tbs of lime juice per serving. The citrus adds a nice touch and helps cut through some of the fat. Give it a try!

  • Cort

    2021-12-01 00:24:58

What length of time I recommended for slow cooker or does everything go ok fully cooked?

  • Kim

    2021-11-29 16:16:37

This recipe is delicious. Just wish I could print it in two pages instead of five, with just the recipe and instructions. Is there a way to do that? Thanks.

  • Joann

    2021-11-18 17:58:30

Fantastic. Great soup for a cold night. Will definitely be on a regular rotation.

  • Karen

This is one of the most delicious soups I've ever eaten! This soup will be a regular on my meal planning agenda.

  • Ronalyn

    2021-11-09 00:36:22

This is a keeper! Thank you for the recipe!

  • Jess

    2021-10-16 20:24:07

This recipe is so delicious even with fresh tomatoes!!

  • Jennifer

    2021-10-13 20:31:29

This was very good! I had not used my InstantPot before so I was a little unsure on using the saute feature. So I cooked the sausage, garlic, onions and oregano on the stove top and then moved it to the InstantPot and finished it there. I wasn't sure if the InstantPot did something special (like thickened it) so that is why I finished it there, but it didn't seem to do anything it wouldn't have done in the pot. Anyway, just thought I'd share it can be done on the stovetop too.

  • Nnn

    2021-10-07 21:28:36

The first few times I made this, I followed the recipe exactly…and it was amazing! My husband and I are not huge fans of sundried tomatoes, but we still very much enjoyed it. After making it probably 30 times, the only adjustments I’ve made was replacing the tomatoes with roasted red peppers, I add a can of cannellini beans (with the juice, helps to thicken the broth) and subtract one cup of the chicken broth. I’ve also added mushrooms on occasion. I hate being the person that adjusts recipes and talks about it, but here I am doing it anyway! Not 100% Keto because of the beans, but still hearty, delicious, and healthy-ish! I hope that this helps someone/gives someone ideas on how to make an amazing recipe a little spin😁

  • Andrea

    2021-05-04 19:11:29

Delicious!! I used vegetable broth as well and a can of fire roasted tomatoes instead of sun dried tomatoes. Added a little less cream as I like my soup thick..will be be making it in the future ..so warm and hearty!!

  • Stevie

    2021-04-10 16:12:21

I love this soup, I make it all the time!!! I've altered the recipe to make it vegetarian using vegetable broth (better than bullion), a package of tofurkey italian sausage, and I also add 16 oz of chopped, sauted, baby bella mushrooms. Sometimes, to mix it up, I add some roasted red peppers, as well - making it this way it is a lot lighter and a lot less greasy - I'm absolutely hooked!!!

This is a great recipe. I like to add cauliflower rice (frozen) at the end with the kale.

  • Tara

    2021-02-24 10:14:23

Delicious! To be truly keto (11g carbs per serving down to 5g with modifications), reduce the amount of onion, sub fresh tomato for the sun dried (super high in carbs) and fresh spinach for the kale. Plus watch the brand of sausage/meat you use - a lot of sausages have added sugar. Easy to make on stove-top, as well.

  • Ashton

    2021-02-22 00:56:34

Made this recipe on the stove instead of an instant pot but it was super easy and turned out perfect! It was very flavorful and filling! Loved it so much, I will definitely make it again :)

    2021-02-16 13:21:07

This was really good! Since my family isn’t much for hot Italian sausage I used 1 pound of mild chicken Italian sausage and then one link of hot just to add some flavor. They always like more meat in their soup anyway. Loved the kale!

Excellent. I used what I had: ground turkey, Italian seasoning, red pepper flakes, s & p, paprika and bay leave. I sautés onion, celery and garlic with the meat. Added 4 cups ckn stock, a can of diced tomatoes cook 6 min. Then I added some chopped zucchini, spinach and a bloc of fat free cream cheese and out lid back on for 8-10 minutes. Delicious.

"10 out of 10!" is what my husband said, and "this recipe belongs in a 5 star restaurant!" This is after saying last nights dinner was a "5 out of 5!" I have to agree your recipe is REALLY good and I've shared it with to my mom and sister :-D

  • Kc

    2021-01-14 20:48:57

I added chicken breast to this recipe and used Oktoberfest sausage and it was friggin amazing! The whole family loved it. Tastes like the soup from the Olive Garden minus the potatoes

  • Andrea

    2021-01-12 20:21:57

Yum! Made a single recipe, but doubled the sausage and used one pkg hot and one pkg mild. Also added some Italian seasoning and used fresh spinach instead of kale. So yummy! Also made it on the stove since I don’t have an instapot. Super easy! Trying to figure out how many carbs per serving.

  • John

    2021-01-11 15:20:32

DELICIOUS! I served this for a small dinner party and everyone wanted the recipe. Even better leftover. I used a stovetop rather than instant pot. Still easy. I also substituted the kale with spinach and broke with Keto a bit and substituted 1cup of the chicken stock with 1cup white wine. I added the wine first and let the alcohol burn off a few minutes then added the chicken stock.

OMG! Sooo good! Big hit in the house. Used smoked garlic sausage from costco that I was trying to get rid and put in red pepper flakes. Trying to keep it more low carb so didn't use sun dried tomatoes but used can diced and drained liquid. Did add a pinch of cream cheese like someone else suggested. HUGE HIT!

  • Cara

    2021-01-03 21:36:54

This was great and really easy. I did not use spice sausage. I used Trader Joe’s sun dried tomatoes in the pouch. I’m not a big fan of kale so I cut it really small and I didn’t mine it at all. I will def make again.

  • Mary

    2021-01-03 15:18:11

5 star. The only thing I do differently is remove the sausage from pot and Then do the onions alone for 3 minutes, then oregano and then garlic for only 45 seconds before I add back the sausage and sauté them for a minute. I also added 1 1/2 cups of riced cauliflower and cooked that in the soup. I reduced the kale a bit because of the cauliflower...... Delish,

  • Joan

    2021-01-01 21:54:46

I’ve made it a few times and we love it. But I noticed your picture shows more red oil... maybe I should not drain the sun dried tomatoes all the way???

  • Joan

    2021-01-01 18:52:31

Delicious! It’s now a staple in my house! I’ve used kale and spinach too! I think I prefer kale but both yummy! I might try keto noodles or zoodles next time... love this soup!

  • Lisa

    2020-12-20 15:40:02

We tried this soup yesterday and it’s now my husbands favorite. So good!! We had spinach in the house instead of Kale and it worked out just as fine (FYI).

  • Ann

    2020-12-17 18:10:14

It’s delicious. I made but didn’t have sun dried tomatoes. Substituted can tomatoes with a little tomato paste. I added small chopped potatoes and kernel corn. Also added Hungarian paprika

  • Kristin

    2020-11-20 17:16:13

This was delicious! Made it in crock pot ~ sautéed everything first. I also added sautéed baby Bella mushrooms. I doubled the recipe because I knew I’d live it based on reviews.

  • Colleen

    2020-11-20 10:24:12

I made this soup last night for my family and it was a huge hit!! I never leave recipe reviews, but felt compelled to because this was SO good. I don't follow Keto, so I added two cans of cannellini beans since I was feeding six people, also used hot italian turkey sausage since we don't eat pork. I made 1.5x the recipe and it was true to serving size for 6 people. Tasted really good with some warm foccaccia bread (if you're not Keto). Also very easy to do on a stove top if you don't have an instant pot!

  • Kathy Stuart

    2020-11-10 17:59:20

This soup is AMAZING!!!! I doubled the recipe taking advice from the woman that said there wasn’t enough for leftovers. So glad I did. It’s spicy, creamy and so filling. My non-Keto loves it and my kale hating self will be making this over and over again. I used baby kale for quicker prep. I can’t think of a single thing about this soup that isn’t perfect...it’s even beautiful to look at.

Even my non-keto husband loved this soup. The only negative thing he had to say was, “It (the recipe) didn’t make a lot of soup.” which translates to it didn’t make enough for lots of big bowls of soup. 😄😁😆 Yes he liked it that much and that means I won’t be freezing any of this. LOL
