How to bake chicken breasts

Pound chicken the chicken breasts to an even thickness, especially if you don’t slice them to make them thinner. This will tenderize the chicken meat and ensure the chicken breasts cook faster and more evenly.

Season the chicken breasts with a mix of spices, then rub with oil. Arrange each chicken breast in the baking pan on the rimmed baking sheet. They can slightly touch because the meat will shrink as it cooks, but make sure the chicken breasts don’t overlap.

Directions

1. To make the baked chicken breasts: Preheat your oven to 425°F (220°C). Using a meat mallet or rolling pin, pound each chicken breast to 0.8-inch (2cm) thickness at the thickest part. Make sure your fillets are all the same thickness to ensure even cooking.

2. In a small bowl, combine paprika, instant chicken stock, oregano, salt, garlic powder, onion powder, pepper, and chili powder (if using).

3. Line a baking sheet with aluminum foil (or parchment/baking paper). Arrange chicken breasts on the pan and toss the chicken in the seasoning. Drizzle with the olive oil and rub seasoning all over to evenly coat. the chicken breasts.

4. Bake chicken breasts in the preheated oven for 15-18 minutes, or until the internal temperature reaches 165°F (75°C) using a meat thermometer. Baked chicken breasts should be golden with crisp edges. If you like, you can broil (or grill) on high heat for the last 2 minutes of cooking time. 

5. Optional step: While the chicken is in the oven, melt butter in a small skillet. Sauté garlic until about half a minute, and remove the skillet from heat. Stir in chopped parsley, then pour the garlic butter mixture into the baking juices on the baking sheet, stirring well to combine all of the flavors together.
