1. To make the baked chicken breasts with tomato & mozzarella: Preheat oven to 400°F (200ºC). Pat the chicken breasts dry.

2. In an oven-safe dish, place the cherry tomatoes, red onions, garlic, salt, pepper, and Italian seasoning. Pour the olive oil on top, and toss until well combined.

3. Place the chicken breasts in the middle of the baking dish. Add the remaining Italian seasoning, salt, pepper, and crushed red pepper flakes on top of the chicken breasts. Drizzle olive oil if desired.

4. Bake in the preheated oven for 25 minutes, until the tomatoes soften and the chicken is almost cooked through.

5. Remove from the oven (don’t turn off the oven) and sprinkle chicken with shredded mozzarella and more spices, if you like. Return to the oven and bake for another 10 minutes, until cheese is bubbly and chicken registers 165ºF (74ºC) with an instant-read meat thermometer.

6. Add fresh basil leaves and serve the baked chicken breasts with a side of your choice. Enjoy! ❤️🍗

Tips for the mozzarella baked chicken breasts recipe

This baked chicken breasts recipe is such an effortless weeknight meal. Full of fresh and healthy ingredients, it’s super flavorful and so simple to make! Here are a few tips to make it even better:

  • Take the time to bring chicken at room temperature so it cooks evenly.
  • Feel free to add more spices, or customize your spice mix. We like this recipe with Cajun seasoning for a kick of heat!
  • If your chicken breasts are too thick, or if you’re in a rush, slice the chicken breasts horizontally to make them thinner. They will cook faster!

What can we serve with the baked chicken breasts?

This baked chicken recipe is a great balanced meal with lots of veggies and protein. If you’re extra hungry, serve the baked chicken breasts with more roasted vegetables such as asparagus or bell peppers.

How and how long to keep the baked chicken breast leftovers?

Keep the baked chicken leftovers covered in the fridge for up to 4 days. You can reheat in the oven, covered with foil to avoid drying up.

Can we use frozen chicken breasts?

For the best flavor and texture, we recommend you use fresh chicken for this recipe. If you use frozen, be sure to thaw it completely and pat dry with paper towels to remove any moisture.
