Directions
1. To make the portobello mushrooms recipe: Preheat your oven to grill/broil settings on high heat. Arrange a rack to the middle of your oven.
2. In a saucepan or a microwave safe bowl, combine butter, garlic and oregano and melt until garlic is fragrant. Brush the bottoms of each mushroom with a bit of melted butter and place them, buttered side down, on a rimmed baking sheet.
3. In a medium bowl, combine breadcrumbs, parsley, scallion, salt and pepper and pour the garlic herb butter mixture over. Mix well to combine.
4. Flip mushrooms and brush over the insides of each mushroom cap with melted butter. Stuff each mushroom with herbed garlic butter stuffing and top with tomato halves. Grill or broil in the oven until golden, about 5 minutes.
5. Remove from oven, garnish with fresh parsley and serve the portobello mushrooms immediately. Enjoy!
Tips for the portobello mushrooms recipe
- If you mushrooms are quite big, you can precook them in the oven before stuffing. After brushing with butter, bake the mushrooms for 5 or 10 minutes so they soften a bit.

I think you forgot to say (in Step 2 or 3) to cook the mushrooms, solo, for maybe 5 minutes?? Only 5 minutes total left my portobellos way too crunchy.

Could I do this in an Instant Pot on Broil? Thoughts on how?

Good but add Parmesan to the top.
