Directions

1. To make the creamy garlic mushrooms: Sauté bacon in a large oven-safe skillet (preferably cast-iron) over medium heat until crispy. Use a slotted spoon to transfer cooked bacon to a paper towel-lined plate to soak up some of the fat. Then set bacon aside.

2. In the same skillet, melt the butter. Add the mushrooms, drizzle with oil and scrape up any bacon bits from the bottom of the pan with a wooden spatula. Fry the mushrooms for 4-5 minutes until browned.

3. Pour in the chicken broth and let the sauce reduce for 2 minutes.

4. Add garlic and herbs to the sauce and mushroom and cook until fragrant, then pour in the cream. Reduce heat down to low. Gently simmer the mushrooms into the sauce for another 4 or 5 minutes. The creamy sauce should have slightly thickened.

5. Add spinach and cook until wilted, about one minute. Adjust seasoning with salt and pepper.

6. Add the bacon back to the skillet and give everything a good stir to combine. Top the mushrooms with grated parmesan cheese.

7. Put under the broiler for one or two minutes until mushrooms are crisped on top. Remove the creamy garlic mushrooms from the oven and serve immediately. Enjoy! ❤️
