Ingredients you need for the Skillet Chicken Thighs in Sundried Tomato Parmesan Cream Sauce
Directions
1. To make the sundried tomato parmesan chicken thighs skillet: In a large cast-iron skillet heat oil over medium-high heat. Season chicken thighs generously with salt, pepper, and Italian seasoning.
2. Sear chicken thighs until golden, about 5-6 minutes per side. Transfer the chicken thighs to a plate.
3. Return the skillet to medium heat. Add minced garlic and cook for 1 minute. Stir in thyme, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring often. Stir in sundried tomatoes and parmesan cheese to the sauce.
4. Return chicken thighs to the skillet and spoon sauce all over the chicken thighs. Cook until chicken is cooked through about 10 minutes more. Garnish with basil, grated parmesan cheese, and serve the sundried tomato parmesan chicken Thighs over cauliflower rice, rice, pasta or bulgur. Enjoy!

Tips on how to cook chicken in a skillet
- Before cooking, allow chicken to come to room temperature. The chicken will cook faster and you’ll get a nice sear on the surface when you cook chicken in the pan. When chicken breasts or chicken thighs are cold from the refrigerator, they cooks unevenly in the skillet and renders moisture.
- Allow the chicken meat to rest for 3-5 minutes once it’s done cooking. For example, if you cut into a chicken breast right away for serving, the juices inside the meat are super hot and they will leak out of the breast and make it dry and tough. When you let the juices reflow into the meat when resting, the chicken keeps its moisture and tenderness.
- Use lot of spice and herbs: chicken can be pretty bland, especially when it cooks quickly in a pan. You don’t have time to infuse the chicken meat with flavor like when you roast or use a slow cooker. So season thoroughly your chicken on all sides and allow to rest at room temperature for 10 minutes minimum to let the spices and herb flavors penetrate the meat.
