- 8 chicken thighs (bone-in/boneless, skin-on/skinless – it’s up to you)
- 1/4 cup (60ml) olive oil
- 2 tablespoons lemon juice
- 2 teaspoons oregano
- 1 crumbled bouillon cube
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon onion powder
- 1 teaspoon ground mustard
- 1 teaspoon kosher salt and cracked black pepper
- 1 teaspoon crushed red chili pepper flakes, optional
- 1 tablespoon chopped fresh parsley, for garnish

Directions
1. To cook the chicken thighs: In a large salad bowl, combine olive oil, lemon juice, oregano, bouillon cube, paprika, garlic powder, cumin, onion powder, ground mustard, salt, and pepper. Save half of this marinade in a cup or mason jar for later. Add the chicken thighs to the remaining marinade and marinate for 10 to 15 minutes.
2. Remove the chicken thighs from the marinade, drain and discard the marinade.
3. Prepare your grill and cook the chicken thighs over medium heat until they reach an internal temperature of 165ºF (74ºC), turning from time to time. Remove from the grill, and allow the grilled chicken thighs to rest for 5 minutes, tented with foil. Sprinkle with red chili pepper flakes and garnish with parsley and lemon slices. Serve the grilled chicken thighs immediately with the reserved marinade on the side. Enjoy!
