Directions

1. To cook the chicken thighs: In a large salad bowl, combine olive oil, lemon juice, oregano, bouillon cube, paprika, garlic powder, cumin, onion powder, ground mustard, salt, and pepper. Save half of this marinade in a cup or mason jar for later. Add the chicken thighs to the remaining marinade and marinate for 10 to 15 minutes.

2. Remove the chicken thighs from the marinade, drain and discard the marinade.

3. Prepare your grill and cook the chicken thighs over medium heat until they reach an internal temperature of 165ºF (74ºC), turning from time to time. Remove from the grill, and allow the grilled chicken thighs to rest for 5 minutes, tented with foil. Sprinkle with red chili pepper flakes and garnish with parsley and lemon slices. Serve the grilled chicken thighs immediately with the reserved marinade on the side. Enjoy!

  • You can double the batch for the marinade if you’d like to have more for serving.

Should I use boneless skinless chicken thighs or bone-in with skin? 

We used skin-on bone-in chicken thighs for this recipe but nothing prevents you to use skinless, boneless thighs – They should cook a little quicker than bone-in so keep an eye on them.

What to serve with the grilled chicken thighs?

Anything goes! Grilled or steamed veggies will work great, and if you’re extra hungry, serve the grilled chicken thighs over rice or cauliflower rice.
