1. To make this Asado chicken breasts recipe: In a bowl, combine paprika, cumin, chicken stock, lemon juice, onion powder, oregano, half the minced garlic, chili flakes, and olive oil. Taste and adjust salt and lemon before adding chicken breast.

2. Add in chicken breasts and coat all sides. Cover and marinate chicken breasts for at least 30 minutes in the refrigerator. When ready to cook, remove chicken breasts from the marinade and reserve the marinade for later.

3. While the chicken breasts finish marinating, heat a skillet with a little olive oil. Add the spinach and season with salt, pepper, and red chili pepper flakes (if using). Add the remaining minced garlic and lemon juice and saute spinach for 2-3 minutes over medium-low. Remove cooked spinach from the skillet and set aside.

4. Rinse and wipe clean the skillet. Heat 1 tablespoon oil in the skillet over medium-low heat and cook marinated chicken breast on both sides, until the internal temperature reads 165ºF (74ºC) on an instant-read thermometer, approx. 15 minutes. Remove to a plate, allow to rest for a couple of minutes then slice.

5. While the chicken is resting, you can deglaze the skillet with chicken stock and add the remaining marinade. Cook on medium until reduced, 2 minutes approximatively.

6. Divide sauteed spinach into plates or bowls and arrange sliced chicken breasts. Drizzle with the sauce. Serve the chicken and sauteed spinach garnished with lemon slices, and fresh chopped parsley. Enjoy! Add an extra splash of lemon juice and sprinkle some grated parmesan (optional) over the spinach before serving the Asado chicken breasts and spinach. Enjoy!

Tips for the chicken Asado recipe

This easy Asado chicken breast with spinach uses a fragrant mix of spices that will delight your taste. Here are a few tips to make the best chicken Asado recipe ever:

  • You can pound the chicken breasts to flatten them before marinating. They will cook faster and evenly.
  • Always only flip the chicken when one side is done. Don’t flip too many times.
  • If you’re extra hungry, you might want to double the spinach as it shrinks when wilting.
  • Do not marinate the chicken for too long periods because the acids in lemon juice will break down the protein fibers of the meat and might make the texture mushy. Thirty minutes up to four hours should be adequate to infuse the flavor.

Can we use other chicken cuts for the Asado chicken?

Yes, feel free to use boneless chicken thighs for this Asado chicken recipe. They are more flavorful than chicken breasts but have more fat. Count 2 chicken thighs for one chicken breast.

How and how long to keep the chicken Asado leftovers?

You can keep the chicken Asado leftovers for up the 2 days in an airtight container. Reheat on the stove or in the microwave with a few drops of water to loosen up the sauce.
